For need of processing and pretreatment of high pulses field electric, equipment of high pulses field electric pretreatment firstly established, the voltage and pulses, frequency, pulses duration can controlled.Spring bamboo by HPEF pretreatment before air drying were studied in this research, elicited a rule that the strength of field electric and number of pulses affected in air drying, discussed velocity of water loss and weight of moisture by arousing of field electric and number of pulses during air drying. By analyzable of ORIGIN software, the processing parameter which 1.0kV/cm of field strength and 50 pulses resulted in the maximal water loss during air drying.The piece of sweet potato by High pulses field electric pretreated which penetrated in osmotic solution and then dryed by hot air were firstly studied in this paper. The experiment adopted the strength of field electric and number of pulses as factor, analyzed influence of solid gain and water loss after osmotic dehydration, dry velocity of air drying, educed that it gotten that 2.0kV/cm and 50 pulse make obviously effect. The reason for this is that the cell membrane penetrated by the fitting parameter of high pulses field electric.Model of sweet potato by pretreated of HPEF during of air drying was firstly established in the thesis. Going at pre-treatment on sweet potato, a recursive model that field electric, pulse number, dry temperature and air flow on dry weight content was established with design of combination of orthopole rotary. Using the Page model was designed with four factors of field electric, pulses number, dry temperature and air flow with the water loss.In order of study the influence of HPEF pretreatment of winter bamboo during osmotic dehydration, HPEF pretreated before osmotic dehydration quickened the loss of moisture in the article. Uniformity experiment was designed with three factors of field electric, thickness of winter bamboo and times of osmotic dehydration, and two indexes of dehydration rate, solid gain.
