This topic early in the investigation foundation, found mainly in the direct residues in agricultural products of our country at the present stage the main pesticide (such as apples, pears and other fruits; cauliflower, cabbage and other vegetables) and deep processing of agricultural products (if in Wine juice, etc.). Residues of pesticides Wine in machining process control technology is still relatively backward, one is taken to increase the fermentation time to reduce pesticide residues; two is in the treatment Wine pre production process by washing to achieve reduction effect, through the survey statistics, the two main kinds of methods are greatly increased Wine production cycle, and the reduction effect the general. In this paper, the electric field treatment containing organic phosphorus pesticide red Wine mash by high voltage pulse, analysis the effect and mechanism of high voltage pulse treatment of pesticide on the red Wine mash dimethoate, malathion, chlorpyrifos, dichlorvos and other organic phosphorus reduction. To determine organophosphorus pesticide reasonable reduction of physical methods, physical methods to reduce pesticide residues and its degradation technology to improve the quality of China’s vegetable products, safeguard the people’s diet safety, have important theoretical and realistic significance to improve the international competitiveness of China’s vegetable products. The results are as follows:First, Lab made organic phosphorus red Wine mash Cabernet Sauvignon Red Wine mash Pesticide Dichlorvos, malathion, dimethoate, chlorpyrifos for oxygen reduction rate analysis. Respectively, using single factor design method to different organic phosphorus pesticide red Wine mash sample, design and processing of the test response surface design method, and the results were analyzed by statistical analysis.
