Chili Hot Air Drying Characteristics

Capsicum is usually used for seasoning of foods in people's life, and it has sanitarian effect. Along with China's entering WTO, the export volume of agricultural products rose increasingly and capsicum' demands become increasingly large. Capsicum drier industry is imperative under the situation. Hot air drying is a sort of simple, convenient and cheap drying way, this experiment researched capsicum' hot air drying characteristic.Select hot air temperature, air velocities and loading thickness as influencing factors to test the drying dynamic of capsicum. Draw the drying characteristic curve of capsicum, and then analyzed the drying rate at various conditions. Used Matalb software to fit the drying curve virtually, and got corresponding polynomial regression model at various confidents.Select hot air temperature, air velocities, loading thickness and drying time as factors to proceed capsicum dehydration's orthogonal experiment. Analyzed and found the primary and secondary of the factors and optimum combination. Using quadric regression design to establish regression equation of capsicum dehydration rate and drying quality, and then verified the equation's significance.The result of the experiments presented capsicum's hot air drying characteristic curve, and then analyzed the influencing degree which each factors affects capsicum drying. It got optimum combination of drying process parameters for dehydration rate and drying quality evaluating indicator. Based on the result of experiment, a mathematical regression model was established. The result of this experimental study may provide a basis for the further research work on the Capsicum drying and the design of dryers.
