Chongqing Municipality, Part Of The Safety Of Beef Determination Of Indicators And Analysis

Serious problems of beef food safety have emerged with the rapid momentum of beef industry growth in Chongqing recently. Heavy metal, pesticide and animal remedy residues became the most serious issues which influenced the beef food safety & quatity. This paper investigated the ecological environment of beef raiseing in Chongqing and the varieties and amount of noxious substance in beef of Chongqing. And then the reaserch aimed to clarify the origin and the pollutant pathway of these noxious substance.The reaserch was carried with the samples of local cattle from the main district of beef product of Chongqing, Fengdu and Yunyang.25 fresh beef and 5 liver samples from Fengdu Guangming Food Corporation and 25 beef samples from Yunyang Yikouxian Corporation were analysed to show the amount of residues of hydrargyrum, plumbum, arsenic, cadmium, chrome,666,DDT, organic, phosphorus, pyrethrum esters pesticide, antibiotic, Sulfonamide, furans, Hormone and Quinolones.1 Hydrargyrum and arsenicis is not detected in the samples from Fengdu, while liver Pb,Cr,Cd and beef Pb is 0.2,0.1,0.2 and 0.1mg/kg respectively, which all below maximum residue limit (GB2762-2005). Amount of liver Pb and Cd si below European Union maximum residue limit, and Pb is below the CAC maximum residue limit. Beef heavy metal residues is below nuisance free beef standard and come up to NY5044-2008 and NY/T843-2004.2 Hg, Pb, Cr, Cd is is not detected in the beef samples from Yunyang, arsenicis is 0.1mg/kg, which comes up to European Union maximum residue limit. Beef heavy metal residues is below the maximum residue limit of GB2762-2005,NY5044-2008 and NY/T843-2004.3 666, DDT, organic phosphorus, pyrethrum esters pesticide is not detected in all samples from Fengdu and Yunyang. Pesticide residues come up to GB2763-2005,NY5044-2008 and NY/T843-2004 standard.4 antibiotic, Sulfonamide, furans, Hormone, Quinolones is not detected in all samples from Fengdu and Yunyang. Animal remedy residues come up to standard of NY5044-2008 and NY/T843-2004.
