[Aim]: To observe the inhibitory effect of anti-Streptococcus mutan.s Hen-egg-yolk (IgY) on acid production and glucan synthesis of Streptococcus mutans. [Method]: 1. Measure the value of pH of the culture medium substrate. 2. Determine the glucan with anthrone method after using the different titer of IgY on S.mutans and S.sobrinus. 3. Determine the glucan with antlirone method after using the different titer of IgY on glucosyltransferase (GTF). [Result]: 1. The effect of inhibit acid production is influenced by the titer of antibody. High titer with high inhibition (P 0.05). 2. The inhibitory effect of antibody on S.mutans and S.sobrinus synthesis glucan has a similar tendency with the inhibitory effect of antibody inhibit acid production. The antibody has the highest inhibition to the water soluble gluean (SG) and total gluean (IG) synthesis of S.mutans and the water insoluble glucan (IG) synthesis of S.sobrinus. 3. The effects of depress GTF synthesis glucan has the same tendency with inhibited S.mutans and S.sobrinus synthesis glucan, the depression is special for cell-associated GTF synthesis 1G. [Conclusion]: 1. The antibody can inhibit the acid production. 2. The antibody can. reduce S.mutans . S.sobririus and GTE synthesis the glucan, especially to the water insoluble-glucan synthesis. 3. The antibody may depress the glucosyltransferase activity.
