Anthopleura nigrescens(Verrill) belongs to order Actiniaria, family Actiniidae, genus Anthopleura, which is a special of sea anemone found in seaside in China. Anthopleura nigrescens(Verrill) were analyzed for the contents of protein, lipids, amino acid, fatty acid, and minerals. The results showed that A. nigrescens(Verrill) is a kind of animal with high protein and low lipid contents. The essential amino acids and fresh taste amino acids contents were of high leve1. Oleic acid (18:1) content was the highest of all fatty acids, and the content of C22:2 was the second. A.nigrescens(Verrill) was rich in minerals, especially microelements such as Zn, the content of Zn was 254.4 mg/kg. According to the single factor experiment and orthogonal experiment, the optimal extraction parameters are established as follow: ratio of material to solvent is l: 5 (w/v); extraction temperature is 55℃; enzyme load is 6%; and initial pH is 8.5. HP GPC analysis shows that the molecular weight of A. nigrescens(Verrill) Purificata is 22 kD. IR spectrums indicate that the sugar units of A. nigrescens(Verrill) Purificata are configuration of pyranose. CE results turn out that the monosaccharide composition of A. nigrescens(Verrill) Purificata is D-(+)-galactosamine hydrochloride, glucosamine, N-acetyl glucosamine, glucose, mannose, fucose and galactose with the ratio 1.1:1.5:7.2:7.3:1:2.7:2.1.
