Our experiment focused on finding the most appropriate extraction method and establishing the common used methods through the comparison and improvement. We optimized the condition of gas chromatograph and gas chromatography—mass spectrometry,based on the experiment,we found and verified the best method to determination of flavor and flavor material.Then we established the chromatographic fingerprint and calculated the similarity.Finally,we treated the samples by the same method and calculated similarity to judge their quality. The results are as follow :We found that simultaneous distillation extraction(SDE)is the most appropriate extraction method by comparing common used methods. Then we improved the experiment conditions of extracting flavor and flavor material.and get the optimum operation parameters.We optimized and established the condition of separation and detection methods by gas chromatography.- mass spectrometry. Based on the experiment,we found the RSD of precision, reproduction and stability of the chromatographic fingerprint are all less than nine percent. which imply that the method is fit for the requirement.We identified more than fifty chemical components by gas chromatography.- mass spectrometry. Established the chromatographic fingerprint of flavor and flavor material by analyzing ten batches samples which are extracted from coffee, we calculated the similarity both of standards and samples to judge their quality and found that the four batches samples are below standard.
