Conjugated linoleic acid (CLA) and Conjugated linolenic acid (CLnA), which both belong to theConjugated Polyunsaturated Fatty Acids, CLA and CLnA have been reported have many beneficialbiological activities, for example, anticarcinogenic, immune-enhancing activities, improve fat metabolism,lower blood pressure, hypolipidemic, reducing fat accumulation, and anti-atheosclerosis. So CLA andCLnA using as either medicine development, food nutrition or health will be very significant for the healthand living of human being.In this paper, the Conjugated Polyunsaturated Fatty Acids was first reviewed. The synthesis andbiological effects of CLA and CLnA were introduced. In the preparation methods, the main chemicalsynthesis methods of CLA and CLnA were generalized. In addition, three classes of enzymes reactionproducing Conjugated Polyunsaturated Fatty Acids in organism were also talked about. Later, weintroduced the oxidation mechanism and some methods of improving oxidation stability. The maincharacterization of CLA and CLnA were also introduced gas-liquid chromatography (GC), highperformance liquid chromatography (HPLC), nuclear magnetic resonance (NMR), spectroscopy (UV), andso on. Then the actualities of CLA and CLnA and the problems of the current research were talked about.The purpose and contents of the present research were also stated.In the third chapter and the fourth chapter, we synthesized of FA-alcohol ester and FA-polyphenolsester with the method of acyl chloride, to improve stability. The purification by TLC and a series of testing.Finally, using the UV determined the oxidation stability of fatty acid esters and proved that it can improvethe stability of fatty acid obviously.In the fifth chapter, CLA- and CLnA- lecithin esters were synthesized by lipozyme catalysis method.The obtained crude products were purified by TLC and the structures of purified lecithin esters werecharacterized by UV and FT-IR. It was found that CLA methyl ester, CLA-oil and free CLnA all could beinter-esterified to lecithin esters. The following UV analysis showed that the oxidative stability of thesepurified CLA- and CLnA-lecithin esters increased greatly compared with that of free CLA and CLnA. Thepresent study will be helpful for the industrialization of CLA and CLnA in the future.Finally, we systematically summed up the contents of the study and prospected the research of its production and widely application in daily life.
