Using Camellia seed meal as material, the optimizing of extraction, purification and quantification and the structure and surface activity of tea saponin were studied. The potent application of tea saponin as a surfactant was investigated. Methods on extractraction of tea saponins by using water and ethanol were reported. The optimum conditions of tea saponin extraction were 95%(v/v) ethanol,3 h and 50℃. And the optimum conditions of the product hydrolysis showed by orthogonal test were:decoloring temperature 65℃, decoloring time 90min, H2O23.34 ml/g, pH 9.5, tea saponin concentration 0.15 g/ml. The content of tea saponin for the purification of macroporous resin absorption, was 20.4%, and its purity reached in 86.3%.Three quantification methods, weight measure, vanillin-sulfuric acid and reverse-phase high performance liquid chromatography (RP-HPLC) were performed to measure the content of tea saponins, respectively. Three kinds of saponin samples were tested:saponins in tea seed meal, low-refined tea seed saponins (30%-70%) and high-refined tea seed saponins (70%-90%). Results showed that the detection accuracy of Weight measure was greatly affected by the sampling amount for analysis. While the optimal sampling amount of 3 g was used, quantification results of the saponin content by Weight measure showed no significant differences with vanillin-sulfuric acid and RP-HPLC methods. The detection accuracy of RP-HPLC method was greatly affected by the extraction technique. While by soxhlet's extraction, the interference of impurity in tea seed meal could be eliminated effectively. The quantification results of saponins in tea seed meal, low-refined tea seed saponins and high-refined tea seed saponins by the three optimized methods above were very accordant. Thus, these methods are suitable for the quantification analysis of saponins of the three kinds of samples. The potent application of tea seed saponins as a surfactant was investigated. The critical micelle concentration was 0.06%. The satisfying foaming properties confirmed tea saponins as a good foaming agent. The emulsifying activity of Tea saponin was better than OP-10, while as good as ABS and AES. The experiments showed that the ability of tea saponins could be enhanced by AES when they have a appropriate ration by 0.1%-0.12%(TAS) and 0.1%-0.08%(AES). The application experiments of tea saponins in shampoo indicated that it could improve the hair conditioning performance of the hair shampoo in both dry and wet state significantly.
