Camellia oleifera seed oil is derived from the seeds of C.oleifera Abel.It is rich in unsaturated fatty acids and natural active ingredients such as sterols,squalene,tocopherols,etc.It has the effect of preventing hypertension,coronary heart disease and atherosclerosis.At present,the composition analysis of C.oleifera seed oil mainly focuses on fatty acids,sterols,squalene,and tocopherols,and relatively few studies have conducted on glycerides,free and bound phenolic compounds,and C.oleifera saponins.Based on this,the following work is carried out:?1?Establishing pretreatment,qualitative and quantitative methods of flavonoid glycosides and C.oleifera saponins.?2?Analyzing the effect of the refining process on the composition of C.oleifera seed oil?flavonoid glycosides,C.oleifera saponins,free and bound phenolic compounds,triglycerides?and physical and chemical indicators?acid value,peroxide value,light absorption value?.?3?Analyzing the effect of 12 months natural oxidation process on the constituents of refined oil?free and bound phenolic compounds,triglyceride?and physical and chemical indexes?acid value,peroxide value,light absorption value?during 12 months.?4?Analyzing the antioxidant performance of C.oleifera saponins and free and bound phenolic compounds during the accelerated oxidation of C.oleifera seed oil,and monitoring the dynamic changes of glycerides and their oxidation products.The main findings are as follows:?1?Multiple compositions,including 21 C.oleifera saponins,2 flavonoid glycosides,23 phenolic compounds,12 triglycerides,48 glycerides oxidation product and 30 carbonyl compounds were tentatively identified by UHPLC-Qtof-MS in C.oleifera seed oil.Besides,absolute quantitative methods of flavonoid glycosides,phenolic compounds and triglycerides were established by UHPLC-QqQ-MS.?2?During the refining process,the alkaline water added in crude C.oleifera seed oil greatly reduced the acid value,while it also reduced the contents of C.oleifera saponins,flavonoid glycosides,free phenol and bound phenol by 99.87%,99.93%,80.36%and 22.58%,respectively.The dewaxing process reduced the peroxide value and absorbance values K232 and K268 by 69.23%,25.23%,and 14.29%,respectively.The deacidification and dewaxing processes increased the proportion of triglycerides in oil by 0.61%and 0.78%,respectively.?3?The acid value,peroxide value,and absorbance value all increased during the12-month natural oxidation process.The total free and bound phenolic contents decreased by 48.66%and 28.16%,respectively.The total triglyceride content decreased by 24.67%and individual triglyceride content decreased by 17.86-49.15%.The four main triglycerides?OOO,OOL,OOP,OOS?decreased by 17.86-28.25%.?4?In the process of accelerated oxidation,the triglyceride content of Camellia oleifera seed oil under different treatments always showed a downward trend.After 24hours,it decreased to about 23%of the original content.Compared with the blank oil sample,the time for the percentage of triglyceride content in the blank oil added saponins sample to reach the 12 months natural oxidation base line was delayed by 1hour,the refined oil sample was delayed by 0.5 hour,and the refined oil added saponins sample was delayed by 1.3 hours.Camellia saponins,free vanillic acid and vanillin in Camellia seed oil may delay the oxidative degradation of triglycerides,and to a certain extent inhibit the generation of oxidized,cleavage-type oxidation products,aldehydes and ketones.
