This paper mainly studied the modification and application of the diet fiber, selecting water-soluble cellulose-(3-polydextrose and insoluble cellulose bean dregs cellulose as the research objects.The dissertation got the preparation technique of the octenylsuccinate diet fiber esters, studied the structure and basic properties of the octenylsuccinate diet fiber esters and conducted the research of their preliminary application. The main results are as follows:1. the esterification modification and application research of water soluble fiber-β-polydextrose(1) The preparation conditions of the octenylsuccinateβ-polydextrose ester.the research studied the effect of the main factors on the degree of substitution of the octenylsuccinateβ-polydextrose ester,such as pH of the reaction system, reaction temperature, substrate concentration and reaction time,by single factor experiment. The suitable parameters for the preparation was as follows:concentration of β-polydextrose60%, amount of the octenylsuccinate3%, pH of reaction system8.5, reaction temperature40℃, reaction period4h,which was obtained though the orthogonal test.The degree of substitution reached0.0209.Compared withβ-polydextrose,there was a new characteristic absorption peak at1726cm-1in the infrared spectra of theβ-polydextrose ester,which was caused by the telescopic vibration of the C=O bond,and that identified that the carboxyl groups was successful introduced into theβ-polydextrose.(2) the properties of the octenylsuccinateβ-polydextrose esteCompared withβ-polydextrose, the transparency of theβ-polydextrose ester fell slightly; The viscosity of theβ-polydextrose ester increased a little, which was stable with the strong pH tolerability,and was almost no changed in adding NaCl to the solution;The emulsification and emulsion stability of theβ-polydextrose ester increased significantly, and with the increase of the substitution degree, emulsification and emulsion stability presented the tendency of increasing, and the emulsion had certain stability in the range from pH3to pH11. theβ-polydextrose ester had the the glucose good freeze-thaw stability as well as the originalβ-polydextrose.(3) the application of the octenylsuccinateβ-polydextrose esterThe application of the octenylsuccinateβ-polydextrose ester as emulsifier in the oil microencapsulated products was researched. The oil microencapsulated products with adding6%octenylsuccinateβ-polydextrose ester as emulsifier got the better results with low surface oil content (1.35%) and high embedding rate (93.5%). And the recovery emulsion of the powdered oils was ivory,,which didn't have unusual smell, conjunctival and precipitation.The experiment studied the sensory evaluation and the storage stability of the powdered oil product. The results suggested that the microcapsule poeder oil was successful,which had the good storage stability with the better embedding effect. The scanning electron microscopy (sem) figure showed that the surface was smooth, without cracks of spherical.2.The modification and application research of bean dregs dietary fibre,(1) The preparation of bean dregs diet fiberThe bean dregs dietary cellulose was prepared through the acid-alkali method, and was blenched with hydrogen peroxide as the decoloring agent, the suitable conditions for the preparation of bean dregs fiber was as follows:acid treatment0.5h at the room temperature, alkali treatment at70℃, alkali treatment time1.5h, adding amount of alkali1.5mL/g. The purity of the bean dregs cellulose reached82.10%under such conditions; The powder made from the waste liquid of the extraction process contained52.24%protein and13.56%oil,which can be used as the animal feed powder. The Better blenching conditions was as follows:hydrogen peroxide10%, the reaction system pH8.5, reaction temperature70℃,reaction period2.5h. Bean dregs dietary fiber prepared under such condition was close to white, and the water-holding ability and the swelling ability of the bean dregs fiber were improved.(2) The esterification modification of bean dregs diet fiberAlkali treatment and microwave-assisted alkali treatment were applied to pretreatment of soybean dietary fiber to improve its reactivity. The experiment showed that both can improve the reactivity of the bean-dregs cellulose and the latter had the better effect.The water retention value(WRV) of the microwave-assisted alkali pretreated cellulose was increased by40%and by24.5%than the alkali treated cellulose and the original cellulose respectively. Infrared(IR) spectrogram,X-ray diffraction(XRD) spectrogram and SEM were used to study the changes of chemical composition and physical characteristics of soybean dietary fiber after activation. The results showed that the chemical composition of soybean dietary fiber was not changed, hydrogen bonds among soybean dietary fiber molecules were partially destroyed and the surface was damaged. These changes resulted in the increase of specific surface area,accessibility and reactivity of soybean dietary fiber.The octenylsuccinate soybean dietary fiber ester was prepared with the microwave-assisted alkali pretreated cellulose and octenyl succinic anhydride as raw materials. The main factors of the esterification reaction was studied to how to effect the degree of substitution of the okara cellulose esters. On the basis of single factor experiments, the optimal preparation conditions of the okara cellulose ester determined by the orthogonal experiments were as follow:amount of the octenylsuccinate10%, pH of reaction system7.5, reaction temperature60℃, reaction period1h.The degree of substitution reaches0.0681.Okara cellulose ester was characterized by IR. The IR spectra of the okara cellulose esters was roughly the same as the IR spectra of the original bean dregs cellulose, excepting a new peak at1000cm-1,which was caused by the telescopic vibration of the C=O bond.And that identified that the carboxyl groups was successful introduced into the β-polydextrose without other changes.(3) The application research of bean dregs dietary cellulose estersDue to the molecules containing hydrophobic groups and hydrophilic groups, the octenylsuccinic soybean residue cellulose has a certain amount of surface activity or emulsifying property. The application of the okara cellulose ester in detergent was studied preliminarily. The washing paste product was prepared with okara cellulose ester as the main active ingredient and the filling material, which had the strong detergency and was friendly both to the environment and and the human.
