In this study,tobacco fields of similar tobacco varieties,soil fertility and cultivation measures in xiangxian,ruyang,fangcheng,baofeng and wuyang were taken as experimental fields,then the accumulation,metabolism and transformation rules of carbon compounds and nitrogenous compounds,the change rule of related enzyme activities,the numerical relationship between metabolites and related enzyme activities,relationship between carbon and nitrogen metabolisms and tobacco flavor quality in the process of carbon and nitrogen metabolisms of typical strong aroma style flue-cured tobacco in henan province were studied.The results were as follows:(1)The total sugar and reducing sugar content of strong aroma style flue-cured tobacco in Henan decreased first and then increased during the field growth process, the starch content accumulated slowly when transplanting and increased rapidly at 50d to 60d after transplanting, then the growth rate slowed down and the content peaked at 80d after transplanting then decreased slowly and became steady.(2)The total nitrogen content of strong aroma style flue-cured tobacco in Henan began to decrease at 30d after transplanting and decreased rapidly at 60d after transplanting and reached the lowest level at 100d after transplanting. The nicotine content increased gradually during the the field growth process.The NO2- and NO3- content increased frist and then decreased from 30d after transplangting and reached the highest level at 50d after transplangting and lowest at 100d after tanplangting. The free amino acid decreased gradually during the the field growth process.(3)The invertase activities of strong aroma style flue-cured tobacco in Henan reached a maximum at 50d after transplangting and then decreased. The amylase activities increased gradually from 30d after transplanting and peaked at blooming stage,then decreseased gradually and had a slow recovery at dome stage.The NR activities had a variation trend of decreased-increased-decreased from 30d after transplanting. .The NR activities decreased from 30d to 40d after transplanting and then increased sharply,at 50d after transplanting the NR activities had a dramatic decrease and became steady from 70d after transplanting and reached the minimum at 100d after transplanting. (4)By using SPSS statistical software, Main material of carbon and nitrogen metabolism and the enzyme activty were analyzed in the middle leaves of Ruyang,Xiangxian,Wuyang,Fangcheng and Baofeng.The fitting models of them were determined.(5)The mainly metabolism of Nanyang flue-cured tobacco transformed from nitrogen metabolism in field growth process to carbon metabolism in squaring stage.The relationship between Carbon and nitrogen metabolism and tobacco leaf aroma were analyzed. The results were as follows:The C/N in 40d and 70d after transplanting and carotenoid was highly significant correlated, The C/N in 60d and 70d after transplanting and west cypress silane was highly significant correlated, The C/N in 50d,80d and 100d after transplanting and Maillard reaction products was highly significant correlated, The C/N in 30d,70d and 100d after transplanting and phenylalanine was highly significant correlated, The C/N in 100d after transplanting and Neophytadiene was highly significant correlated, The C/N in 100d after transplanting and the total of Aromatic matter was highly significant correlated.The NR/INV in 40d after transplanting and carotenoid was highly significant correlated;The NR/INV in 40d after transplanting and west cypress silane was highly significant correlated;The NR/INV in 30d and 40d after transplanting and Maillard reaction products was highly significant correlated;The NR/INV in 30d,50d,70d and 100d after transplanting and phenylalanine was highly significant correlated;The NR/INV in 40d,50d,70d and 100d after transplanting and Neophytadiene was highly significant correlated; The C/N in 100d after transplanting and the total of Aromatic matter was highly significant correlated.(6)The smoke quantity of strong aroma style flue-cured tobacco in Henan had a significant correlation with C/N of 30d ,60d,and 90d after transplanting.The miscellaneous gas had a significant correlation with C/N of 50d and 80d after transplanting. The somke quality had a correlation with C/N of 40d,70d and 100d after transplanting.The strength had a negative correlation with C/N of 60d after transplanting. The pungent gas had a significant positive correlation with C/N of 50d after transplanting.The aftertaste had a negative correlation with C/N of 80d. The smoking evaluation score had a significant negative correlation with C/N of 30d after transplanting and a negative correlation with C/N of 60d after transplanting.with the increase of C/N, the smoke quality became pure , the miscellaneous gas and smoke quantity reduced.During 30d and 60d to 100d after transplanting,NR/INV and smoke quantity was significant or highly significant negatively correlated; NR/INV in 50d after transplanting and miscellaneous gases was highly significant positively correlated, NR/INV in 80d after transplanting and miscellaneous gases was significant positively correlated, NR/INV in 40d after transplanting and miscellaneous gases was highly significant negatively correlated; NR/INV in 30d after transplanting and strength was highly significant negatively correlated; NR/INV in 30d and 60d after transplanting has a greater impact on smoking scores.
