Agrocybe Cylindracea, also known as "Agrocybe chaxingu", is a assemble of high protein, low fat,low sugar part, a pure natural pollution-free diet of edible fungus in health and care. Because of tastedelicious, good taste, unique flavor, its rich in17kinds of amino acids which the human body needs,such as asparagic acid and glutamic acids (especially the eight kinds of amino acid material which thebody can not synthesis) and Anti-cancer polysaccharide, more than ten minerals trace elements, it hasthe very high nutrition and medicinal value, by the love of common people, has far-ranging market,In this paper, we use Agrocybe Cylindracea as material then design single factor and orthogonaland use the hot water and ethanol precipitation to extract Agrocybe Cylindracea polysaccharides(ACP),The Phenol hydrate-sulfuric put to use to determine its content. In order to get the pure polysaccharide,we use the Sevag method to get rid of protein and the DEAE-52anion exchange columnchromatography and Sephadex-G200column chromatography to filter and purify, Then determineACP's molecular weight, it is about380189by HPLC analysis and IR spectrum analysis show that it ismainly for pyranoid glucan. According to practical application in production,we want to find the besttechnology optimization condition that can both keep polysaccharide bioactivity and improve the yieldof ACP. To build a suit of simple quick method of ACP's evaluation system and provide valuablereference for other fungi polysaccharide research at the same time.
