This test is to select fine spawn from Aerodyne cylindracea mother culture,and to screen mother culture medium; using cotton seed hull,saw-dust,corn cob,corn stalk,which are aboundent in Shanxi, as substrate,to select formula of substrate suitable for Shanxi and northern areas,and to carry on routine nutritional component and functional component analysis of Agrocybe cylindracea,also carry on the overall evaluation of nutrition of protein amino of Agrocybe cylindracea's fruitbody,which is used common nutritive value appraise method in the world. The result shows: 1. Aerodyne cylindracea 3 from the Sanming Mycological Institute of Fujian Province behaves finer than other varieties。2. The optimum mother culture medium was potato 200 g,glucose 20 g, agar 20 g,KH2PO4 2 g,MgSO4 0.5 g,peptone 2 g,yeast lotion 1 g,vitamin B1 10 mg。3. The optimum formula of substratecotton was cotton seed hull 52%,saw dust 26%,wheat bran 18%,gypsum 1.5%,calcium superphosphate2%,sucrose 0.5%,biological efficiency can be up to 77.9%。4.The protein content of Agrocybe cylindracea fruitbody is comparatively high,the human body must ore element abundant,the fruitbody of Agrocybe cylindracea has 17 kinds of amino acids.The essential amino acid makes up 42.1% of the total amino acid,obviously higher than the standard albumen of FAO/WHO mode,the chemical score(CS),the amino acid score(AAS),essential amino acid index(EAAI),biological value(BV),nutritional index(NI) and score of ratio coefficient of amino acids(SRCAA) of which is respectiveiy 38.6,52.2,77.6,72.88,14.6,54.14.
