The fish roes, rana roes, eggs of sea cucumber, fish oil, carp and black carp were researched in this paper.The fatty acids were analyzed qualitatively and quantitatively, and the protein and trace elements were also detected and analyzed.The fatty acids of samples were extracted by Bligh-Dyer method, methyl esterficationed, and then analyzed by gas chromatography-mass spectrometry. The fatty oil was saponificationed and acidificationed to make the EPA , DHA and other PUFAs were drifted from it and they were detected by HPLC. Detection wavelength, mobile phase, flow rate and column temperature conditions were explored. Selected methanol-0.1%phosphoric acid as mobile phase, flow rate 1mL/min, column temperature is 35℃and detection wavelength is 211nm, the recovery of method is 94.71%-104.2%, RSDEPA is 0.38%, RSDDHA is 0.67%.The contents of protein were analyzed by Kjeldahl method and UV spectrophotometry method. The UV spectrophotometry method is improved, the recovery of method is 99.3%-102.5%, RSD is 0.23%.The samples were treated by microwave digestion and then detected and analyzed trace elements by ICP-MS. The recovery of ICP-MS is 91.20%-109.9%, RSD is 1.54%-7.57%.The results show that the samples'fatty acids are not only diverse, but also have long carbon chain (C12-C24). The fatty acids mainly contained oleic acid, linoleic anid, octadecenoic acid, EPA, DHA and a small amount of nerve acid. The contents of EPA and DHA in roes and eggs are more than the other samples, EPA is 581.2μg /g and DHA is 265.9μg /g in the sturgeon roe. Protein content of the samples are more than 30%, the roes of fish, rana seeds, eggs of sea cucumber's protein content are higher than the other samples. In the carp and black carp, protein content of the roes are more than other parts of the fish.The content of Na, Mg, K,Ca, Fe and Zn are higher and the harmful trace elements Hg, Pb and As levels are lower than 0.1μg / g in the samples.
