Fruits & vegetables is the indispensable daily necessities and the major source of people obtaining nourishment in people's life. As food quality problems appear recently, Consumers pay more attention on quality security of fruits & vegetables. Fresh and safe fruits & vegetables have become a consumption popular trend. Fruits & vegetables easy rotting and Minimal short, extremely the system of fruits & vegetables cold chain is not sound, work environment is discontinued, all of these directly cause fruits & vegetable severe losses in the transport process. In china, fruits & vegetables from the field to the table wastage rate as high as 25% to 30%, while in developed countries the rate have been controlled under 5%.So, how to improve the quality of fruits & vegetables cold chain is more important, and the core task is to analyzing and controlling task factors.Firstly, investigate fruits & vegetables cold chain by the supermarket and market channels, establish the quality risks assurance system of fruits & vegetables cold chain based on the survey.The paper includes four component factors of quality risks system of fruits & vegetables cold chain:operation risks,sales risk, method, technical risks, external environment risk,then analyzes the influence degree of each risk source;The paper assess comprehensively the quality risks of Wei fang fruits & vegetables cold chain by fuzzy comprehensive evaluation; Moreover the paper offer the internal controlling mechanism of quality risks in each link of fruits & vegetables cold chain based on assessing results and the characteristics of quality risk;Using the static game theory to analyze the controlling and coordinating mechanism for the quality risks between the fruits & vegetables cold chain; Using the balance principle of risk-income to realize maximize income of the whole fruits & vegetables cold chain. Lastly, the paper constructs the quality guarantee system of fruits & vegetables from the angle of the cold chain. There are four basic measures:establishing warning systems, establishing monitoring system, establishing trace system and the credit management system.The study of this paper has great significance to reduce quality risks and improve the quality of fruits & vegetables cold chain.
