At present, China's restaurants have not formed characters and brand, which caused breakeven mixed. According to statistics, China's restaurants are about 30 percent in the red state, and 30 percent in the break-even or small profit condition. Entering the 21st century, although the Chinese traditional restaurants develop quickly, and its growth rate is 10 percent higher than other industries', most of the restaurants are private enterprises, small scale, less income, lower profit, less net worth, lower productivity, shortage of higher quality talent and so on. It is unbalanced between China's restaurants and Society, economy, quality of life. China's restaurants operation modes are lagged, so it is significant to investigate the Operations model.Firstly, the paper analyzes related theories, such as business process reengineering, performance management, Salary Administration. Secondly, it analyzes restaurants'development history, situation, and characters, and then it puts forward the problems, also, it states the evolution of operation. Thirdly, from restaurants'operation modes of the optimization principle, it analyzes the optimization procedures and implementation strategy. Fourthly, with "Bashu Legend" for example, it states the development history, and analyzes operation modes, and then analyzes the effect. In the end, conclude the paper.The paper analyzes the problems of restaurants'operation modes and example the "Bashu Legend", in order to provide theoretical guidance, and then promote restaurants to realize sustainable development further.
