With the rapid development of the social progress and market economy, the proportion ofservice economy in China's national economy began to increase gradually, and then it becomes themain means for rising China's industrial structure adjustment. Theory of supply chain and supplychain management use widely, and led to the service supply chain appeared. When the enterprisesfind the products supply chain has not enough to gain the competitive advantage, many businessespay attention to the service supply chain, and as it as the main method for gaining competitiveadvantage.Chinese catering industry is china's traditional service industry in the tertiary industry, it playsan important role in social development and people's life, and it continues to develop and grow. Atpresent, Chain catering industry is the most dynamic part of Chinese catering industry, which is themost popular consumer group welcomed and accepted. Therefore, the chain catering industry in thehighly competitive environment, to explore the service supply chain's characteristics and the keyfactors has become a primary means for gaining competitive advantage.This paper reviews the service, supply chain and supply chain management, and describes thesystem dynamics method briefly. And based on the service supply chain characteristics andresearch concludes the definition of service supply chain, and the characteristics and the structureof the service supply chain. With the development of Chinese chain catering industry, we set up thenetwork model of service supply chain in the Chinese chain catering industry, and proposed twokey influencing factors,namely the customer satisfaction and the three elements of service,then toanalyze the composition of customer satisfaction in the service supply chain of the chain cateringindustry,and used regression models to prove the three of service can influence the service supplychain of the chain catering industry. Finally using the system dynamics method analyzesempirically the KFC service supply chain.
