Sesame oil is the requisite that people lives daily, its safety is directly related tothe level of people’s life quality. In order to strengthen market supervision and protectthe interests of consumers, it is urgent need to develop a new fast、efficient、convenient and accurate analytical technology. In recent years,the Near InfraredSpectroscopy(NIRS) obtained the rapid development has been widely used in the foodindustry, petroleum chemical industry, pharmaceutical industry and other fields,including quality of oil testing, etc. near infrared spectroscopy combined withchemometrics in qualitative and quantitative analysis also have very importantapplication. This paper makes a study of the use of near infrared spectral technologycombined with chemometrics used for qualitative identification and quantitativedetection of adulteration sesame oil.1.In order to realize the fast identification of adulteration sesame oil, NIRS hasbeen applied to identify24different brands of pure sesame oil and sesame oil mixedwith soybean oil, peanut oil, cottonseed oil.This paper collected samples of the nearinfrared absorption spectrum Frequencies from3200~10000cm-1transm itwavelength range were selected, Sesame oil samples of original spectrum go byCharacteristics Spectrum of choice and Spectral pretreatment, Adopting clusteringanalysis and principal component analysis(PCA) to set up a model of identification ofsamples. The result showed that:(1)3kinds of adulterated oil have different optimal spectral processing range.(2) The two kind of patterm recognition method to verify the authenticity of therecognition rate is up to100%about adulteration of5%~95%seeame oil,while theadulteration quantity is below5%, two methods have lost the ability to identify,description of near infrared spectral analysis technology in the detection ofadulteration of sesame oil adulteration of the lowest limit of5%.2. In order to realize the fast detection of adulteration quantity about adulteration sesame oil,this paper has been applied to inspection pure sesame oil and sesame oilmixed with soybean oil, peanut oil, cottonseed oil, Selection of optimal spectroscopicwavenumber, optimal spectral pretreatment methods and optimal correction modelcombining with Partial least squares(PLS) established the quantitative analysis ofcorredtion model.and we were performed to validate the model.the result showed that:(1) Single brand sesame oil model correlation coefficient respectively99.46、99.6、99.47, Root-Mean-Square Error of Cross Validation (RMSECV) respectively2.366、2.030、2.407, The relative prediction error in the range of-8to8.3,So, Nearinfrared spectroscopy technique combined with PLS can fast detect single brandsesame oil adulteration quantity.(2) Multi brand sesame oil model correlation coefficient respectively99.69、99.66、99.61, Root-Mean-Square Error of Cross Validation (RMSECV) respectively1.683、1.694、1.882, Adulteration of soyabean oil、peanut oil and cottonseed oil therelative prediction error respectively-17.8to6.37、-14.8to11.9、-12.8to13.3,So,Near infrared spectroscopy technique combined with PLS can fast detect Multi brandsesame oil adulteration quantity.
