As a common food, pasta is an integral part in the Chinese cooking diet. Thus, Pasta Culture had become an important part of food culture in China. Because of different raw materials and unique skill, Chinese pasta formed a distinct taste and visual effects. Especially the Shanxi pasta food, through a long-term inheritance and evolution, had constructed a very local culture in its materials, practices, preferences, category, causes, eating customs and nutritional value. This article chose the pasta food resources in Shanxi as a research subject, and does some reference in its development route, cultural connotation, and historical position.This paper is divided into four parts, respectively studied in the sources and development of Shanxi pasta, and its cultural identity, cultural meaning and historical status which formed in the long process of history. Its historical development has gone through three stages, namely the initial stage of ancient period to the Warring States, the development and abundant stage of the Han Dynasty to Song Dynasty, and the developed and prosperous stage of Yuan, Ming and Qing Dynasties. Shanxi Pasta cultural expressed an overall feature that it is rich in raw materials, has diverse methods in produce, wide in breed, and unique in food customs. The analysis shows that the natural environment, cultural factors, economic factors, historical and cultural environment and so provides the conditions for its formation and development. At the same time, the pasta culture of four areas in Shanxi Province, the north, the center, the south, and the southeast, those four regions has different characteristics due to different local territory. In addition, the Shanxi Pasta culture also reflects the close relationship between health and ethnic character. It full plays the role of the carrier of the folk life, and also is the essence of Shanxi art of diet. Overall, the Shanxi pasta culture makes a positive contribution to the culture history of Chinese food, to promote the acceleration of the food culture and the establishment of the Chinese food cultural circle. Its historical and cultural heritage values should be cherished.
