Chapter1:The chemical active ingredients and the domestic and foreign research progress of jujube dates have been discussed. The paper related to the saccharide compounds, especially oligosaccharides. The classification, physiological functions, extraction and separation method and the structure identification have been reviewed. On the basis of these reviews, our own research content and the innovate were put forward.Chapter2:Jujube dates soluble solids was extracted by water. Orthogonal text was used to find out the optimal extraction condition from Ziziphus jujube dates. The results indicated optimum extraction conditions were liquid-solid ratio of20:1, time of9h and temperature of85℃. The yield of the extracted soluble solid is83.22%in the conditions.Chapter3:The10000D ultrafiltration and500D nanofiltration membranes were used to separate the crude polysaccharides, crude oligosaccharides and monosaccharide from Ziziphus jujube dates extract. At the same time, determine of various chemical active ingredients in concentrations. Then compared the ordinary dry jujubes, fresh jujubes and other dates yield and purity using the method. The results concluded that the efficiency of jujube in different content component exists in the crude polysaccharides, crude oligosaccharides and monosaccharide.Chapter4:Through the static and dynamic separateness factor experiments, the optimum conditions of strongly basic anion exchange resin were obtained by studying the decoloration rate and the recovery rate of oligosaccharide. JuBOl-1, JuBOl-2, JuBO2and JuBO3were gained by DEAE-cellulose column and Sephadex G-25gel column chromatography.Chapter5:These four parts were analyzed for their monosaccharide composition by GC-MS and HPLC. The JuBOl-1was composed of arabinose, galactose, mannose and glucose. JuBOl-2mainly contain glucose and fructose. JuBO2was found to be arabinose, glucose and fructose. JuBO3 was composed of arabinose, rhamnose, glucose and fructose.
