Tartarian buckwheat is a kind of grain with high nutrition.However, Tartarian buckwheat seed is small,complex shape and tartarian buckwheat shell toughness,kernel more brittle.Kernel shell gap is small and use the other grain decorticating machine difficult to shell.At present,there is no quantitative analysis theory to design shucking machine of The tartarian buckwheat. Therefore this article focus on the physical and mechanical properties of taetarian buckwheat,and determine geometrical dimensions of taetarian buckwheat、thickness of taetarian buckwheat shell and water content.With the use of TMS-Pro food texthre analyzer do force and displacement test to tartarian buckwheat and tartarian buckwheat kernel aging before and after. With analyzing experimental data,get the changing rule of hardness、failure force and failure energy of tartarian buckwheat and tartarian buckwheat kernel aging before and after.Experiments show that:tartarian buckwheat’s failure force and failure energy is reduce with the tartarian buckwheat aging.This description that cooked tartarian buckwheat easy to peeling.But tartarian buckwheat kernels failure force and failure energy is increase with the tartarian buckwheat aging. This description that cooked tartarian buckwheat kernel hard to break up.And continue to use sand disc buckwheat shucking machine do peeling test.Use the hardness of tartarian buckwheat、the space between up and down sand disk and the line speed of sand disk as influence of test index the rate of half-perfect and perfect kernel and the rate of Broken kernel of test factor.Discovered that the half-perfect and perfect kernel rate is increase,the Broken kernel rate is reduce.The half-perfect and perfect kernel rate is18%、the Broken kernel rate is22%at test conditions for the space between up and down sand disk2.5mm、the line speed of sand disk14.5m/s to sheling cooked tartarian buckwheat.
