In this study, in order to improve the utilization value of the wheat straw, ferulic acid, dietary fiber and other functional ingredients was extracted. The main content and results of this study are as follows:1. Ultrasonic-assisted alkali alcohol method was used to extract Ferulic Acid from Wheat Straw. HPLC method was adopted to detect the ferulic acid content in wheat straw. Ferulic acid release(mg·g-1) as an indicator, study the affect of alkali quality score, ratio of alkali to alcohol, ratio of solid to liquid on, Na2SO3amount, ultrasonic temperature, ultrasonic time and pH. The response surface experiment was designed to optimize the extraction process. The result indicatedthat the optimized extraction condition was sodium hydroxide concentration3.5%, the alkali and alcoho ratio3.6:1,30℃, ultrasonic42min. Under these conditions, the actual extraction yield of Ferulic acid in sraw was8.014mg/g.2.The IDF was extracted from straw based on sequential treatment with alkaline by acid.IDF extraction yiald(%) as an indicator, study the affect of acid treatment temperature, acid treatment time, acid treatment pH, acid amount, alkali treatment temperature, alkali treatment time, alkali amount and alkali concentration. Optimize the extraction process by response surface method. The result indicatedthat the optimized extraction condition was treatment temperature61℃, acid treatment time1.5h, acid treatment pH5.0, acid amount30mL, alkali treatment temperature40℃, alkali treatment time40min, alkali amount8.6mL and alkali concentration3%. the actual extraction yield of IDF in sraw is64.87%.3. Cellulose enzyme method and Aspergillus niger liquid fermentation method were adopted to extract SDF from IDF. SDF extraction yield (%) used as an indicator, studied factors which affect extraction process and researched the technics of the two extraction method. Cellulose enzyme method studied the affect of extraction temperature, extraction time, extraction pH, encyme concentration and solid-liquid ratio. Optimize the extraction process by response surface method. The results indicated the optimized extraction conditions are extraction temperature50℃, extraction time4h, extraction pH4.8, encyme concentration1.6%, solid-liquid ratio1:20, the actual extraction yield of SDF in sraw is3.29%. Aspergillus liquid fermentation method studied the affect of fermentation time, fermentation temperature, fermentation pH and kefir inoculation amount. Optimize the extraction process by orthogonal test, The results indicated the optimized extraction conditions are fermentation time7d, fermentation temperature28℃, fermentation pH5.5and kefir inoculation amount15%. the actual extraction yield of SDF in sraw is13.32%.4. The Dietary Fiber which extracted from the wheat straw was measured on oxidation resistance and physical-chemical properties. The result showed that the SDF which extracted by Cellulose enzyme method restore power of10μg-ml-1Vc reductive ability,the clearance of DPPH·for37.60%. The SDF which extracted by Aspergillus liquid fermentation method restore power of84.62μg-mL-’Vc reductiv ability,the clearance of DPPH-for42.43%. The IDF which extracted by sequential treatment with alkaline by acid has the swelling capacity for1.57mL/g, the water holding capacity for3.82g/g.
