Chinese water chestnut is well-fed, it was often used to produce Chinese water chestnut can, or preserved fruit etc., but Pericarp abounded in dietary fiber was dealt with as wasters. At the same time, the dietary fiber is a kind of very important functional food. It impressed the domestic and international nutritionist. The extraction of dietary fiber from Chinese water chestnut with chemical method was investigated.In the experiment of extracting soluble dietary fiber, through single factor and orthogonal experiments, obtained the optimum processing technology: salt concentration was 0.7mol/L, temperature was 80℃, liquid to material was 15 :1(ml:g), time was 1.5h, the granularity of material is under 40 mesh. In this optimum condition, the yield of dietary fiber was 1.57%.In the experiment of extracting insoluble dietary fiber, through single factor and orthogonal experiments, obtained the optimum processing technology: NaOH concentration was 4%, temperature was 70℃, time was 1h, the granularity of material is under 40 mesh. In this optimum condition, the extraction rate was 84.5%, the purification was 79.1% and the yield was 1.57%.In the study on the blanching of insoluble dietary fiber, through single factor and orthogonal experiments, obtained the optimum processing technology: H2O2 concentration was 6%, temperature was 40℃, time was 2.5h. In this optimum condition, the color was snow-white, water-holding capacity was 7.5g/g, swelling properties was 6.2ml/g.
