Objective:This study is aim to investigate and analyse the cadmium, lead, arsenic content of aquatic products coming from Yantai, the capacity of sample includs four categories of15types sea food. Explore more suitable parameter for the laboratory experiment conditions on cadmium, lead, arsenic content of seafood detection method,so that can optimize the conventional detection method, and then compare with the national standard method. This study hopes to provide effective data support for the health safety of aquatic products coming from yantai, and for market management of quality supervision to the relevant administrative departments.Research methods:1. Sample collection:Randomly collecting four kind of15kinds seafood, the total number is450, according to the distribution of yantai aquatic products, during the period of October2011to November2012. Each kind of seafood are collected successively in their fishing period for2~3times, the interval of collection is every two weeks at least.2. The optimization of cadmium content detection methods:discussing the influence of ashing temperature、atomization temperature、the type and concentration of matrix improver on cadmium content determination, and finally determined the parameter is: ashing temperature is300℃,(?) mA, spectrum bandpass1.3nm, matrix improver for2.5g/L ammonium dihydrogen phosphate. This linear range is0~8.0u g/L, the detection limit is0.2μ g/L, RSD range is1.71%~4.79%, recovery rate range is96.8%~101.7%, and compared with the national standard method, this method is more suitable for our lab to determine of cadmium content of aquatic products.3. The optimization of lead content detection methods:discussing the influence of ashing temperature、atomization temperature、the type and concentration of matrix improver on lead content determination, and finally determined the parameter is: ashing temperature is500℃, atomization temperature is2500℃, lamp current8.0mA, spectrum bandpass1.0nm, and without matrix improver. This linear range is0~50.0u g/L, the detection limit is2.0u g/L, RSD range is1.21%~3.66%, recovery rate range is94.7%~103.1%, and compared with the national standard method, this method is more suitable for our lab to determine of lead content of aquatic products.4. The optimization of arsenic content detection methods:choose digestion time-, reducing agent types and placing time at room temperature as different factors for single factor and three factors three levels of orthogonal test, and finally determine the best pretreatment methods of testing the content of arsenic in our laboratory through the verification test. They are:hydrochloric acid digestion for24h, choosing thiourea-potassium iodide as reducing agent, room temperature placing time is2h.This linear range is0~10.0u g/L, the detection limit is0.2u g/L, RSD range is1.66%~4.45%, recovery rate range is95.6%~110.2%, and compared with the national standard method, this method is more suitable for our lab to determine of arsenic content of aquatic products.5.450samples of15kinds were detected, and the results showed that parts of the cadmium, lead, arsenic content of aquatic products are overweight, including arsenic, the highest one which up to38.33%,cadmium which up to32.44%, lead, the lowest which is8.44%. Different types of aquatic products safety evaluation and heavy metal residual evaluation result is different, the XMPI of crabs is largest, followed by climb shrimp, octopus, razor clam and Loligo japonica, and the XMPI of holothurian is minimum.Conclusion:1. Graphite furnace atomic absorption spectrometry of the cadmium、lead content of aquatic products determined by this research is better than the standard method. Hydride atomic fluorescence spectrophotometric determination of arsenic content in aquatic products determined by this study is also better than the national standard method.2. The determination results of cadmium content of450samples showed that it’s over stander rate is32.44%, all kinds didn’t appear serious pollution. 3. The determination results of lead content of450samples showed that it’s over stander rate is38.33%, all kinds didn’t appear serious pollution.4. The determination results of arsenic content of450samples showed that it’s over stander rate is8.44%,but the arsenic content of sea cucumber, razor clam, pomfret is in serious pollution state.5. Heavy metal residual evaluation results shows that the XMPI of crabs is the largest, and the XMPI of sea cucumber is minimum.
