The Research On Production Performance, Meat Eating Quality, Immunity And Blood Indices Of Sanhuang Chickens And Silkies Under Different Feeding Mode

In this study,120healthy,105days old,Sanhuang chickens and Silkies wereselected randomly.Those camples include stocking feeding chickens and cageculture chickens were taken from ofgansu Tiaoshan group.Used conventionalmethod,auto amino acid analyzer,GC-MS,graphite furnace atomic absorptionspectroscopy,atomic fluorescence photo-metric scenery to determine two groups ofSanhuang chicken and Silky fowl for production performance,conventionalnutrients, melanoma,minerals,heavy me-tals,serum biochemistry indices and theircorrelations.Studies showed that:1. Production PerformanceThe live weight of Sanhuang chicken in stocking mode was2.37Kg,whichsignificantly higher than comparision group(P<0.01). Dressing percentage ofSa-nhuang chicken in stocking mode was81.79%,which significantly higer thancomparision group(P<0.01).The half a net bore rate, full bore rate net,leg musclerate,breast meat percentages were80.25%、74.84%、20.5%、12.54%.The live weightof Silky in stocking mode was1.96Kg, which significantly higher than comparisiongroup (P<0.01).The half a net bore rate,full bore rate net,leg musc-le rate,breast meatpercentages of Silky in stocking mode were85.47%,82.20%,68.26%,16.06%,9.45%.2. Eating qualityThe water-holding capacity and water-loss rate of Sanhuang chicken in stockingmode was68.80%,23.34%,which significantly different with comparisiongroup(P<0.01); blade load and muscle fiber diameters were2.3kg/cm2,41.90μm,which were remarkably lower than comparision group(P<0.05). Thewater-holdi-ng capacity,water-loss rate, blade load and muscle fiber diameters ofSilky instocking mode were64.72%,25.62%,4.11kg/cm2,34.84μm,there are no significa-nt difference with comparision group.3. Nutritional qualityThe contents of protein and fat in Sanhuang chicken meat unedr stocking modewere23.13g/100g,3.25g/100g,the contents of protein was remarkably higherthan comparision group.The contents of Caand Fein Sanhuang chickens understocking mode were2636.56ug/g,12.86ug/g;the conte-nts of Silky under stock-ingmode were45120.38ug/g,18.75ug/g,all of them existed significant differ-ence withcomparision group (p<0.01).The stocking chickens have18kinds am-ino acid,include8kinds essential amino acids and there contents were higherthan cage culture chickens4. MelaninThe experimental group melanin content was0.634g/100g, which wasrem-arkably higher than comparision group (P<0.05).Consequently, the experimentalgroup have a higher nutritional value than comparision group.5. Volatile flavor compounds:There are64Volatile flavor compounds from Sanhuang chicken meat, includingmore than1%of the content of the33kinds.There are14kinds volatile flavorcompounds be taken for the main different substance from comparision group.Normaloctance(0.175%), decane(0.069%),3-methylmercapto-propanal (0.145%),hyacinthin(1.451%),(E)-2nonenal(2.002%),n-hexadecanal(19.036%),2-heptanone(3.166%),isoamylalcohol(1.399%),trans-farnesol(0.219%),aceticacid(2.098%),p-creso-l(0.114%).There are51Volatile flavor compounds from Silky meat, including more than1%of the content of the23kinds.There are12kinds volatile flavor compounds betaken for the main different substance from comparision group.N-octance(1.166%),styrene(0.986%), hexanal(15.308%), aldehyde(5.422%),(E,E)-2,4-decadienal(1.470%),lauraldehyde(3.373%), acetic acid(1.457%),caprylic acid(1.041%),palmitic acid(7.166%), ethylbenzene(0.553%),2-Pentyl furan(0.624%).6. Immune organ indexAll of the immune organ indexs of Sanhuang chickens and Silky under stockingmode were higher than comparision group. Thymus indexs of Sanhuang chickensunder stocking mode was5.21g/Kg, which was remarkably higher than comparisiongroup (p<0.05). Bursa fabricius was1.82g/Kg,which was significantly higher thancomparision group (p<0.01).The spleen indexs and Thymus indexs of Silky under stocking mode were1.35g/Kg,5.18g/Kg,which were remarkably higher thancomparision group (p<0.05).7. Serum indicesThe contents of thyroxine and E2in Silky under stocking mode were rem-arkablyhigher than comparision group (p<0.05).The contents of AKP and AM-Y in Sanhuangchickens under stocking mode were614.67U,305.67U;the conte-nts of Silky understocking mode were430U,245U,all of them existed remarka-ble difference withcomparision group (p<0.05).8. Correlation between seurm indices and the other indexs:There existed significant positive correlation between E2content and dressingpercentage, remarkable positive correlation between GOT and breast meatpercentages,TG and leg muscle rate, GPT and thymus at Sanhuang chicken indexs under stockingfeeding mode; there existed remarkable negative correlation between T3and pH1,GLU and bursa fabricius indexs.Meanwhile,there existed significant positivecorrelation between E2and bursa fabricius indexs at Silky under stocking mode,remarkable positive correlation between CR and dressing percentage, AKP and bladeload, there existed significant negative correlation between T4and water-holdingcapacity.
