The aim of the research was to study the meat quality,blood biochemical indexes and intestinal tissue morphology of the Shibai geese under different feeding modes.One hundred of healthy 4-week-old Shibai geese with no significant difference in body weight were randomly selected from the same batch chicks,which were bred in the Northern geese breeding farm of Datong District of Daqing city,Heilongjiang province and fed in local Xinmin village of Lindian from July to September.The trial period was 10 weeks.Farmers raised Shibai geese according to the experimental design and used natural light during the trail.A completely randomized trial design was adopted,in which each group of 25 Shibai geese was fed in one feeding mode,5 replicates in each group,and 5 geese in each repetition.Group I was housing feeding with only basic diet,group ? was grazing feeding with whole grassland and supplimented basic diet since the 12th week,group ? was grazing feeding with whole grassland in the daytime and supplimented basic diet at night,group IV was cornfield feeding during the day and supplemented basic diet at night.In terms of diet,4 groups of geese were fed from first to fourth week with gosling pellet produced by Daqing Hefeng Bayi Agricultural University Animal Science and Technology Co.LTD.Begain with fifth week,geese were fed and changed diet gradually.Natural light was used and geese drank water from automatic drinking machines freely all the time.,and all the geese were immunized against diseases by normal immunological procedures after birth.The density of geese fed in housing mode was 10/m2.The fence of the playground was barbed wire and the height of the fence was 50-60cm.The supplementary diet was a basic diet,mainly composed of feed for geese based on corn flour and chaff.Samples were collected at the end of 8 weeks of each group,and 5 geese were selected randomly from each group one week.Stripping chest and leg muscle,also duodenum,jejunum,ileum samples were clllected into clean self-styled bag and took quickly back to the lab.Meat color,pH,cooking loss,water loss,shear force were measured in muscles.Insulin(INS),glucagon(CG),alkaline phosphatase(AKP),acid dehydrogenase(LDH),low-density lipoprotein(LDL),high-density egg(HDL),triglyceride(TG),total cholesterol(TC),and serum glucose(GLU)were dectected as serum biochemical indicators.The results showed that:The muscle pH value of Shibai geese was between 6.61 to 7.19 as shown in normal range,while chest muscle pH value of group IV and leg muscle pH value of group I were bigger than group ? Rate of cooked meat was from 52.11%to 61.37%.Muscle shear force range was in 28.34-48.73 N,muscle shear force in group I was significantly greater than in the other three groups(P<0.05),and chest muscle shear force in all groups was significantly greater than leg muscle shear force(P<0.05).Compared with geese raised in housing feeding mode,AKP and LDH contents of blood biochemical indexes in free-range feeding mode were significantly higher(P<0.05).The villi height and intestinal wall thickness of duodenum and ileum were significantly different from those of group ?(P<0.05),while the crypt depth was not significantly different among the groups(P>0.05),and the height of ileum villi was significantly different among the groups(P<0.05).Conclusion:grazing on grass and raising geese on corn could improve the activity of alkaline phosphatase and lactate dehydrogenase in serum of Shibai goose,improving the tenderness of meat,reducing abdominal fat and increasing the height of villi in small intestine.
