Seven mineral elements (K, Ca, Mg, Fe, Mn, Cu and Zn) in honey, soil and nectar weredetermined by Flame Atomic Absorption Spectrometry (FASS), and analyzed the correlationamong soil, honey and nectar. The results showed that seven mineral elements were determined inloquat plants nectar and citrus plants nectar. Seven mineral elements contents in two differenttypes of honey were different. K element content was extremely high. The correlation of severalmineral elements between two types of honey and the honey origin of plant nectar and soil weresignificant. It offers a theoretical basis of research by using a characteristic component tracequantities in honey to analyze the quality of honey and the origin of honey.Qualitative and quantitative determination of carbohydrate in loquat plants nectar, citrusplants nectar and two kind of honey by Thin Layer Chromatography (TLC), High PerformanceLiquid Chromatography differential Refractive Index Detection (HPLC-RID) and Ion ExchangeChromatography (IEC) determined. Comparative Study on the two kind of plants nectar andhoney chromatographic mapping,analysis in their differences and connections between the maps.The results showed that TLC map showing similar spots among the loquat nectar, citrus nectar andhoney production, and the spots difference from which honey mixed with high-fructose corn syrup.Using HPLC-RID determination of fructose, glucose, sucrose and maltose in the loquat nectar,citrus nectar, loquat honey and citrus honey, it was detected a certain amount of fructose, glucoseand sucrose in the loquat nectar, citrus nectar, loquat honey and citrus honey, which citrus nectarsucrose content15%, the sucrose content in loquat nectar about3%.It was not detected maltose incitrus nectar and loquat nectar. Using IEC detected the loquat nectar and citrus nectar, a smallamount of disaccharide and trisaccharide in sample, corresponding to the loquat honey and citrushoney produced, there are a lot of sugar, a small amount of trisaccharide and there is a smallamount of tetrasaccharide and pentasaccharides. The discovery of two nectar and thecorresponding honey found that the map of the unknown substance and provide a basis for thenatural product of nectar and honey carbohydrates.
