AnJi BaiCha is a new albino tea cultivar by vegetative propagation. It have high concentration of amino acids, which has special umami taste and is quality materials for processing quality green tea. The most present studies focused on physiology, biochemistry and chloroplast structure of AnJi BaiCha, and there are little information about gene regulation in the secondary Metabolism during the albescent stage. In this study, enzyme, gene in the polyphenol biosynthesis and chemical composition were analyzed and compared between AnJi BaiCha and FuDing DaBaiCha which is a normal tea cultivar. It aims to provide supports and ideas in AnJi BaiCha from both theoretical and practical aspects. The main results were as follows:1. During the albescent stage,the content of catechins and18amino acids are detected by HPLC,and the result showed that the contents are respectively7.47%-14.93%and0.61%-4.86%in AnJiBaiCha. The content of total polyphenolis11.72%-26.19%in AnJi BaiCha; the content of amino acids is2.79%-6.60%in AnJi BaiCha.2. During the albescent stage of AnJi BaiCha, the activities of PAL、C4H and4CL,which are the key enzyme in polyphenol biosysthesis, were analyzed by spectrophotometric method.The result was that there were some conjunction among the activities of the three enzymes.The results are suggested that there are some elements regulating their activities.3. To analyze the regreesive analysis between PAL,C4H and4CL activities and tea polyphenol contents during the albescent stage of AnJi BaiCha, SPSS software was applied.The result in order were0.224、0.528and-0.130. The results showed that there is an ordinary correlation between the activities of PAL、C4H and4CL and the content of total polyphenol. The result suggested that the three key enzymes can not totally control the polyphenol biosynthesis, and there may be a more direct enzyze and another pathway in the polyphenol biosynthesis.4. To analyze the change trends of differential gene expression in the polyphenol biosynthesis during the albescent stage of AnJi BaiCha, relative quantitation real-time PCR was applied. The results showed that there is no continuity among the expression level. The phenomenon might be related to the multiple composition, the complex structure and the biosynthesis network.
