| The research selected Grassland Red cattle, Charolais cattle, Simmental cattle and Red Angus cattle in high generation hybrid in Inner Mongolia ChiFeng Orient Wanqi Beef cattle farms were used in the experiment, and their average age was14months. Provide identical nutrition level diets and identical feeding and management condition. The experiment was consisted of fattening test and slaughtering test. The fatting test is195days,15days in The feed period,180days in Are feeding period, The slaughtering test is in Oriental Wanqi slaughtering room for slaughter, paisuan and segment. The research attempted to compare the difference in growth performance, intake change, meat productivity, muscle fiber structure in different breed. To find out the difference of performance in different varieties in Inner Mongolia, approach the effects of different varieties on their performance. The results were follows:(1) Growth performanceGrassland Red cattle were obviously higher than Simmental cattle, Charolais cattle and Red Angus cattle in the weight at the end of the fatting period and daily weight gain(P <0.05). Charolais cattle were lower in the weight at the end of the fatting period than Grassland Red cattle and Simmental cattle (P<0.05), and the daily weight gain is lower than other varieties (P<0.05).(2) Intake changeSimmental cattle and Charolais cattle intake were lower than Grassland Red cattle and Red Angus cattle in May(P<0.05). In June, intake of all varieties gets close. To August, Grassland Red cattle, Simmental cattle and Charolais cattle intake continues to grow, but Red Angus cattle intake decrease slightly. In September, Grassland Red cattle, Simmental cattle and Charolais cattle intake tend to stably. Red Angus cattle intake still declined.(3) Meat productiveGrassland Red cattle were obviously higher than other varieties in carcass weight, slaughter rate, back fat thickness and loin eye area(P<0.05). Grassland Red cattle were obviously higher than other varieties in prime meat yielded, high-grade meat yielded(P<0.05). Simmental cattle was obviously higher than other varieties in selected meat yielded(P<0.05). Red Angus cattle were higher in than other varieties(P<0.05). Charolais cattle were higher in prime meat production rate and selected meat production rate than other varieties(P>0.05). (4) Meat qualitiesGrassland Red cattle were in higher crude protein, crude fat, calcium content. Drop of water loss and water lose rate than other varieties, in lower water, tenderness, meat cooking rate (P<0.05). Red Angus cattle were higher in meat ash content, tenderness, Phosphorus content, meat cooking rate and water than other varieties (P<0.05)(5) Amino acids and fatty acidsGrassland Red cattle were higher than other varieties in total amino acids, EAA, Non-essential amino acids, flavor amino (P<0.05)Simmental cattle were obviously higher in SFA than other varieties(P<0.05). Grassland Red cattle were obviously higher than other varieties in MUFA and PUFA(P<0.05).(6) Muscle fiber structureGrassland Red cattle were higher in muscle fiber diameters and lower in sarcomere length than other varieties(P<0.05). Red Angus cattle were lower in muscle fiber diameters and higher in sarcomere length than other varieties(P<0.05).In a word, Genetic factor have an effect on growth performance, intake change, meat productivity, meat quality and muscle fiber structure in beef cattle. With the result that we can choose different varieties cattle to adopt different feeding condition and market demand, providing scientific basis for Inner Mongolia Beef cattle breeding. |
