Inner Mongolia is a biggest beef production province, the breeding stock and beef production is in the leading position in China. Tongliao city is in the northeast of Inner Mongolia which is the transition zone of agriculture and animal husbandry, it has advantages of developing natural animal husbandry. Moreover, Tongliao city has long history of breeding, so, the beef industry of there is developing quickly. Vinasse, as a kind of high-quality feedstuff, can not only save costs, but also can get good breeding effect. The study research on the situation of the vinasse fattening simmental in Tongliao of Inner Mongolia, in order to master the actual situation of vinasse fattening simmental and provides theoretical basis for using vinasse as a kind of feedstuff to feed simmental. The results show that:1、On condition of fattening simmental by distillers’grains, the moisture, the crude fat and crude protein in longissimus dorsi of simmental account for 68.47%,5.09% and 23.45% respectively. Therefore, distillers’ grains, as a kind of good protein feedstuff, can improve the protein content of vinasse fattening simmental beef, however, it will reduce the moisture and not promote the fat content of simmental beef.2、On condition of fattening simmental by distillers’ grains, the cooked meat percentage, drip loss, and water loss in longissimus dorsi of simmental are 42.16%, 2.23%, and 25.46% respectively, the pH value is lower as 5.56 and the shear force is 4.11 kgf, the L value is 102.18, a value is 28.35, b value is 51.96 represented by the freshcolor in Lab mode. In the slaughter performance, the dressing percentage is 52.19%, loin eye area is 57.91cm2, and the daily gain is 1.00 Kg. We consider as the dressing percentage of vinasse fattening simmental is about 52%, loin eye area is larger than normal Simmental, but the total weight gain is not ideal. In addition, on condition of vinasse fattening, simmental beef has lighter freshcolor, better tenderness, but less water holding capacity.3、On condition of fattening simmental by distillers’ grains, the apparent digestibility of the crude fat, crude protein, NDF, ADF, calcium(Ca) and phosphorus(P) are 90.22%,70.34%,76.50%,71.61% and 63.28% respectively, the apparent digestibility of phosphorus(P) is relatively lower as 31.47%. The results show that vinasse fattening simmental can improve the nutrients digestibility in feed in some degree.4、Vinasse fattening simmental beef are rich in amino acids, the total amino acids account for 19.35%, the essential amino acids(EAA) account for 8.16%, the EAA account for 42.19% of the total amino acids, EAA account for 72.97% of the non-essential amino acids(NEAA); The content of the flavor amino acids is 4.95 ±0.37g/100g, the content of fresh sweet amino acids is 4.09±0.29 g/100g, the flavor amino acids account for 25.74% of the total amino acids, the fresh sweet amino acids account for 21.11% of the total amino acids, the sum of the both account for 46.85%. After the amino acids scoring of the FAO/WHO(1985), the amino acids’ score is better than the ideal protein model besides the Val, Met and Cys. Lys’s score is 129.88±10.24% and is the best. The beef of the vinasse fattening simmenal is rich in varity and content of the amino acids. A larger ratio of essential amino acids exist in total amino acids, the ratio of EAA and NEAA is high. The results show that, on condition of vinasse fattening, the ratio of flavor amino acids in is high, the flavor of beef is well, the ratio of amino acid is ideal of simmental beef.5、On condition of the fattening simmenal by distillers’ grains, the mineral elements in simmental beef is numerous in variety, the content of calcium(Ca), phosphorus(P), magnesium(Mg), kalium(K), cuprum(Cu), zinic(Zn), iron(Fe), is 266.92 mg/kg,6198.44mg/kg,547.75mg/kg,10303.43mg/kg,2.24mg/kg, 110.42mg/kg,112.75mg/kg respectively. The results show that the vinasse fattening simmental beef is rich in mineral elements, the nutritional level of mineral elements is high.6、About 30 kinds of fatty acids were tested in this experiment, the SFA, MUFA and PUFA accounted for 43.52%,37.71% and 6.64% of total fatty acids respectively. The P/S, M/S and n-6/n-3 is 0.15,0.87 and 6.17 respectively. The results show that, compared with the regular feed fatting cattle, the composition and structure of the fatty acids in vinasse fattening simmental beef is reasonable, there is no significant difference between them.
