In recent years, various types of food safety accident-prone, and have brought great harm to people’s health and living standards. So food safety issues have gotten more and more attentions. Especially in fresh meat, due to its short shelf life and the high environment requirement to preserve and high damage costs, fresh meat quality and safety issues become the focus of social and government departments. Based on the quality chain theories, the formation of fresh meat quality is the result the management of various organization and elements in the meat quality chain, which is a dynamic chain structure. And, key nodes are closely associated with the logistics activities. Therefore, using the principle of quality chain management, to identification and control the key node, is an effective way for the process control of meat cold chain logistics.This paper is based on the project of "Research and demonstration of the cold chain logistics key technology in Beijing". Through the project, described the present situation and the existing problems of the cold chain logistics. Then, based on the quality chain management principles and methods of analysis, the paper made a detailed analysis of the formation process and the coupling effect for the meat quality chain in Beijing, and used the questionnaire method and cluster analysis algorithm node to identify the key notes. Finally, according to the different characteristics of the key nodes, this paper brought up some effective control methods and build meat quality chain management information system as a node control means, which provided a reference for the process control of meat cold chain logistics in Beijing.
