Food safety is the thing that related to the people’s livelihood welfare, economic development and social harmony. Recently, with the people’s living standard increaing day by day, the food safety problem had became a hot topic as a social public. Food safety incidents occurred frequently, made food safety control level became torture of government credibility and the scale of enterprise morality in some degree. Globally, the food safety problem was an important and difficult problem in any country or region.This article selected the supermarket chain, which is closely related to daily life the most industry as the research object, adopts the method of questionnaire, interview and so on, to the moral character, a supermarket chain in the food safety control is analyzed in fixed-point diagnosis. Through the survey found that the supermarket on food safety controls exist many problems, mainly displays in:employee food safety management efficiency is low, the enterprise food safety control system is not perfect, the key elements of food safety control does not reach the designated position, etc. To solve these problems, draw lessons from the advanced experience about food safety control, put forward the following suggestions:first of all should be malicious enterprise internal work practice, establish a scientific strategy of enterprise culture; Second, improve the process control and using PDCA cycle to develop standard operating procedures and reinforce their implementation; Again, with the development of the external force, active references to government supervision and social supervision; Finally, perfect the evaluation system, ensure effectively operation controls.The researchs achievements of this paper not only could be solve the problem of moral character, but aslo has certain model function for the food safety controls basic theory research and practice.
