With the progress of the times,the level of people's living standards continuously improve,therequirements for food has increased not only by quantity but also by quality.However,the frequent occurrence of food safety incidents seriously draws a very bad influence on the interests of consumers,social stability and national development.Research on food safety has become a social hotspot,for the maintenance of consumer physical and mental interests,the protection of food production,sales and any other things relative to enterprises to survive healthily,the guarantee of social stability and national economy,food safety management research should be improved and enriched.According to the latest research results,mostly scholars adopt the technical measure and risk analysis to carry out theoretical researchfor food safety management in China,they provide reference and advice of the technical operation and biology knowledge for food safety protection.But food safety management researchesaremainly concentrated in the macro which leads to these indicators for the specificindustry are not significant.As we known,supermarket isan important place for consumers to buy food in a modem life,so the strict management of the supermarket should be widely adopted,so that the food would be much more safety than any other supply channels of circulation,but as the place of people buying food which are closely related to their life,the supermarket should be taken seriously.The study takes the supermarket industry as the research object and research based on the supply chain,in consideration of the food supply chain such as:raw materials-processed products-circulation-terminal market-food consumers.Supermarkets as part of the retail terminal,plays a role as feedback information and stimulate theupstream of supply chain to enhance the importance of food safety,therefore,we shall consider the supermarket as the main body in order to study on theelements offood safety management,evaluate composition of the supermarket food safety management elements,and then carry out a promotion strategy.By the means of reviewing domestic and foreign research and combine with the characteristics of China's supermarket industry,this study takes the supply chain perspective as a beginning,follow up with the food-purchasing section safety management,the food-storingsection safety management,the food-transportingsection safety management,the food-processingsection safety management,Sales of food section safety management,the personnel management of food safety management as primary indicators of supermarket food safety management elements,and the expansion of other 23 specific indicators as well.By the means of hierarchy analysis to build judgment matrix,distributethe indicators betweenelements ofthe weight and build evaluating system of supermarket food safety management.The last but not the least,the established evaluation system of food safety managementelements shall be adopted in designing of the questionnaire of food safety management in supermarket.The status and level of YH supermarket's food safety management were evaluated by questionnaire.According tothe result of questionnaire,the fuzzy comprehensive evaluation method should be used to evaluate and analyze the advantages and disadvantages of YH supermarket's food safety management,and then summarize and analyze the strategy of improving the level of food safety management.
