With the economic development and the improvement of living standards, more and moreconsumer demand for fresh food who also require security and nutrition, paying more attentionto the food shelf life of fresh food. But the metamorphosis characteristics of fresh product makethe ordering and storage facing great uncertainty, so it is important to improve the fresh foodoperation style and market’s competitiveness which can achieve by way of developingreasonable inventory models and strategy.This paper first introduces the research background and significance of the application ofthe shelf life of fresh goods inventory theory, and summarizes an overview of deteriorating itemsand fresh food form domestic and foreign scholars. Then paper briefly introduces the basictheories and concepts including the on-shelf-life theory.This paper described three different relationships between the on-shelf-life and deteriorationrate and gets specific expression by demonstrating. There are three chapters which build freshgoods inventory models when the demand rate is a fixed constant and obeys the Poissondistribution. Then very chapter instances sales data and finds the right model from this article toderive inventory policy, and analyzes the factors important in order to illustrate the practicality ofthose model.The innovative work in this dissertation is summarized as follows:(1) In this dissertation, the on-shelf-life theory was applied to the study of fresh foodinventory, which is a label of food quality and safety, it offers the time scale for theinventory policy and enrichs the research methods of fresh food.(2) The paper simulates the relationship between the on-shelf-life and deterioration rate,gets more reasonable method and draws specific expressions, providing a theoretical basisfor the on-shelf-life applications.(3) the model instance data validation, give sensitivity analysis of the relevant factors, drawing important factors that affect inventory strategy.
