Nowadays, people pay more attention to green printing and environmental protection printing ink, which has become the mainstream in the field of printing. Edible ink-jet ink is water-based and environmental friendly and all of its raw materials reach the food sanitation standards. It can be directly printed on the surface of food, medicine and packaging by the way of ink-jet printing. At present, the research and the application to ink-jet ink and the corresponding printing system is already under way in foreign, and such research is still in the beginning stage in China. So, it is so important to prepare and research edible ink-jet ink.According to the special requirements of the edible ink, food grade raw materials are chosen for preparing edible ink-jet ink. And according to the performance requirements of ink-jet ink in viscosity and surface tension, the dosage range of the composition is determined and then the formula is optimized, and then its stability is tested. On the basic of the formula, the influence of the performance to the drop state is studied by adding different content of the resin and adding different kind of the auxiliaries in the ink, and in that case, the ink will present different performance in viscosity and surface tension. And the influence of the ink-jet condition to drop state is studied by changing the voltage and ink-jet frequency in the process of printing. The printing quality of the ink with different performance is tested, and the relationship between printing quality and performance is established in the method of the regression analysis.The results showed that the drop state and the printing quality of the ink is good, and the ink shows good stability. The viscosity, surface tension, inkjet condition is the three important factors that influence the formation of drop, and they will affect the speed, volume, tail length and roundness of the drop. The quality of the printing is evaluated by comprehensive evaluation method, the results show that the printing quality is influenced by surface tension and viscosity, the printing quality will be improved if the surface and viscosity increase, besides, the influence of the surface tension to printing quality is more obvious than viscosity.
