Endocrine Disrupting Compounds (EDCs) is a kind of exogenous chemicals that interferes with hormone balance, causes endocrine system disorders and abnormal physiological changes. EDCs can affect the endocrine system, impact the tissues and organs, cells and biological macromolecules. Finally, EDCs could damage organs, change cell structures and functions, affect contents of biological macromolecules, even disturb the balance of chemicals in cells.Fatty acids are basis materials that constitute the human body fat and lipid. They are also an important part of the phospholipids in cell membranes. Fatty acids have a very important role in the life process, and they can directly adjust the composition of the cell membrane and the physiological function of the proteins and the membrane receptors.Fatty acids have a great influence on human health.In this study, the carps respectively are exposured by estradiol, testosterone, the mixture of estradiol and testosterone, dibutyl phthalate and bisphenol A which appear frequently in our daily lives.The composition and changes of fatty acids in the membrane and cytoplasm of hepatopancreas, kidneys, intestines, gonads and muscles are studied in this paper, then we discuss the physiological effects on the biological organism.The results show that EDCs has a great influence on the fatty acids in the cell membrane and cytoplasm of carp, and makes their content and composition change.In the cell membrane of carp’s organs, EDCs has a more significant effect on the content of unsaturated fatty acids. Bisphenol A makes the content of fatty acids in the cell membrane of of carp’s hepatopancreas, kidneys, intestines, gonads and muscles increase.Between the four kinds of EDCs, bisphenol A has a more significant effect on the content of unsaturated fatty acids.In the cytoplasm of carp’s organs, the content of palmitic acid, stearic acid, linoleic acid and oleic acid have all changed.In addition, different ratio of n-6/n-3polyunsaturated fatty acids can change the composition of cell membrane lipid, and then affect the membrane fluidity. Four types of endocrine disruptors each has an influence on its proportion, and the estradiol has the greatest effect on the proportion of n-6/n-3polyunsaturated fatty acids, makes the percentages of n-6/n-3in the cell membrane of carp’s organs reduce significantly.
