Silkworm pupa oil is rich in protein, fatty acid, chitin, trace element and other ingredients. Unsaturated fatty acid in silkworm pupa oil, especially a-linolenic acid which is the essential fatty acid to synthesize EPA and DHA, could lower the levels of plasma cholesterol and improve liver function. It is of great significance in comprehensive development and application of silkworm resources to study on unsaturated fatty acids in silkworm pupa oil.Refined silkworm pupa oil became clean and clear with slightly unique smell of silkworm pupa and its color became golden yellow after degumming, deacidification, decoloration and deodorizing process. Degumming process of the silkworm pupa oil demonds phosphoric acid which weigh1%of the oil. Studys showed that the acid value of silkworm pupa oil reached the level of edible oil with high yield under deacidification of NaOH solution with its mass fraction of14%and excess alkali quantity of74.4%.By using active carbon as decolorant, the silkworm pupa oil becomes clear with high yield. The color and smell of the silkworm pupa oil improves a lot after refined.The urea adduct method enriching a-linolenic acid was studied on the trends of the content and yield of a-linolenic acid of silkworm pupa oil. The ratio of raw materials, adduction time and adduction temperature is the influencing factor. The optimum conditions of urea adduct method by using response surface design showed:the content of a-linolenic acid increased from82.36%, under the conditions which were that the ratio of fatty acid to urea to methanol (w/w/v) was1.00:3.68:10.72,adduction temperature was-8.39℃, adduction time was10.39h.The encapsulation efficiency of silkworm pupa oil with high a-linolenic acid content was studied on different conditions of wall material combination, core/wall, solid content and entering air temperature. The best emulsion formula for silkworm pupa oil with high a-linolenic acid content is that, soybean separated albumen/maltodextrin is1:1,core/wall is1:1.5,solid content is25%,entering air temperature is190℃.Encapsulation efficiency can get84.8%on this condition.
