Xinjiang Prunus divaricata was made by the paper as study object. The nutrient contents and pectinextraction process of Xinjiang prunus divaricata were analysed. The conclusions was reached afterresearching the pectin physicochemical property as follow: The total acid and total sugar contents of72kinds of prunus divaricata were relatively high. Regarding the total acid content, the sample fromHuocheng Yili was found higher than the sample from Anningqu Urumqi. But the total sugar and reducingsμgar contents were on the contrary. The carotene content of all samples was above1000μg100g. Thehighest one is4868.15μg/100g. The amino acid content of all samples was above2%. Arginine andaspartate in5kinds of samples were higher than other amino acid contents. The mineral element surveywas by means of flame atomic absorption spectrometry, which was easy to control and the result precisionwas high. The marking recovery was95.0%~102.5%, variation coefficient was≤2.41%. The detection limitwas0.009~0.052μg/mL. The data is reliable. The mineral element survey indicated that Prunus divaricatacontains Fe,Zn,Ca,Mg,K,Na,Cu,Mn. With analysis of72types of Prunus divaricata, the contentof total sμgar, reducing sμgar, total acid, Vc, carotene, amino acids, mineral element in the different typesof samples were variant. It had a certain reference value on the further development and utilization ofPrunus divaricata, and to selected special varieties suitable for processing purposes. The optimum processof the microwave-assisted extraction was to use water as the extraction solvent, the liquid and solid ratiowas25:1(mL/g), pH was2, microwave processing time was3min, microwave power was650W,extraction rate was8.34%, the liquid and solid ratio of ultrasonic extraction process was25:1(mL/g), pH2,the extracted frequency of intermediate frequency was48.8KHZ, ultrasonic power was252W, with40℃of water bath to extract in20min, the prunus divaricata pectin extraction rate was7.99%. The cellulasedosage of optimum extraction process of cellulose enzyme was0.035%, pH4.5, with45℃under theconditions of enzymatic in40min, the prunus divaricata pectin extraction rate was8.23%. By comparison,the ultrasonic extraction process was the best method. The research on pectin physicochemical propertyindicated that the solubility and viscosity was substantially lower than the standard pectin, but higher thanthe domestic apple pectin; the comparison of colorphotography and gel shows Prunus divaricata pectin andstandard pectin significantly better than homemade apple pectin; Prunus divaricata pectin also had betterthermal stability. The extract pectin qualities of the Prunus divaricata meet the foreign and price standardsrequire, it would had certain development value.
