In recent years, illegal cooking oil cheating occurs constantly, serious hazards to public safety caused by the bad behavior got more and more attention. In the situation of regulatory difficulties, improving detection means of illegal cooking oil cheating (ICOC), to provide technical support to the food supervision, is responsibility for us food safety researchers.At present, some methods had been proposed. different detection methods were chosen in this study to detect ICOC, including some new detection technologies. Laboratory rapid analysis, high performance liquid chromatography, near infrared spectroscopy method had been attempted. Kinds of quantitative and qualitative analysis methods were used to deal with the results. Comprehensive Test of ICOC in the future is expounded according to the effects of these different methods.HPLC was used to test content of cholesterol in oil.. discriminate kinds of oil according to the relationship between cholesterol and the cheating. a better pre-treatment way was got:Water bath at70℃for4h-saponification, and do extraction with N-hexane. The cholesterol working curve equation is F (x)=2.57833*10-7x-.0430649.the regression coefficient R=.9997. the Detection accuracy rate is87.5%.In our experiments, Near infrared Spectroscopy is used to discriminate illegal cooking oil cheating. Datas of oil, which is processed with Standardization and PCA, is used for building distance analysis model and BP neural network model by_metrology software. The accuracy of distance analysis is89.71%, and BP neural network,97.06%for the highest. In a conclusion, the cheating can be effectively discriminated by analyze NIRS information.Acid value of the oil was been tested by mean of hot ethanol, and the original parameters was improved for qualitative analysis of cheating behavior. The accuracy rate of this hot ethanol detection method is80%. The test results show that our methods have effects, but the detection capability are differ form each other.
