| This test on flaxseed and tea seed as the research object, and three kinds of moisture content (flax seed was6.5%,8.0%,9.5%; tea seed was7.5%,9.5%,11.5%), three kinds of storage temperature (18℃,30℃, room temperature), three kinds of storage gas composition (40%CO2,98%N2and air) for factors, through orthogonal experiment design and by9kinds of controlled atmosphere storage scheme was simulated storage. Three groups of15℃low temperature set for reference. Flaxseed and tea seed physiological indexes was studied(germination rate, catalase activity, lipase activity), storage indicators (mold content, the acid value of crude fat, peroxide value of crude fat, iodine value of crude fat,saponification value of crude fat) and the changing rule of the fatty acid composition and related factors research. The results showed that:As the extension of storage time, storage temperature increases, the increase of water content and the different methods of controlled atmosphere storage, flaxseed and tea seed physiological indexes, storage indicators, fatty acid composition change law is basically the same. After10months of storage, the germination rate gradually reduced, catalase activity and lipase activity increases after the first down. The acid value of crude fat, peroxide value of crude fat, saponification value of crude fat is increased gradually, the iodine value of crude fat content and mold is reduced gradually. Linolenic acid content of flaxseed and tea seed of oleic acid and linoleic acid content are always a downward trend.9groups of experimental results of the orthogonal group is analyzed, the influence degree of factors on the germination rate is:storage time> storage temperature> moisture content> storage gas composition; Factors influence on catalase activity level is:storage time> storage gas composition> storage temperature> moisture content; Factors on lipase activity influence degree is:storage time> storage temperature> moisture content> storage gas composition. Factors that affect crude fatty acid value, iodine value degree is:storage time> moisture content> storage temperature> storage gas composition; Factors that affect crude fat peroxide value, saponification value degree is:storage time> storage temperature> moisture content> storage gas componition. Original samples containing flaxseed linolenic acid is56.617%, and the tea seed contain oleic acid and linoleic acid is82.784%, Because of the high concentration of unsaturated fatty acids, So the change of their content show that the degree of oxidation of unsaturated fatty acids, factors of flaxseed linolenic acid, oleic acid and linoleic acid total content of tea seed influence degree is:storage time> moisture content> temperature storage> storage gas componition.15℃low temperature storage effect is better than the orthogonal group, maintain the quality of flaxseed, tea seed. Controlled atmosphere storage in a certain extent to maintain the quality of flaxseed, tea seed, prolong the storage period of flaxseed and tea seed. In terms of controlled atmosphere storage, charge98%N2storage effect is best,40%CO2is second, filling the air storage effect is the worst. |
