Because of its physiological characteristics and structural features high-quality paddy is easy todeterioration,and storage intolerance.In this study,nitrogen atmosphere storage techniques was used toretain freshness of high-quality paddy,a regular basis for the determination of sprouting percentage,conductivity,amylose content,gel consistency, pasting eigenvalues,alpha-amylase activity,fatty acidvalue,hardness of rice,rice sticky,rice fresh,rice elasticity,sensory evaluation score, objectiveevaluation score and the total number of molds,then compared with the quality of rice in the air controlstorage. Research the high-quality paddy qualities during storage and explore the effect of nitrogencontrolled high-quality paddy storage.The experimental results showed that in the early of storage, molds grew fast and reached a peak in60days, and then began to decrease until180days.And the nitrogen atmosphere storage can inhibit thegrowth of molds.Early in the storage fatty acid value increasing and in240days during storage it becamedown.Moisture and atmosphere control have little effect on fatty acid value.Temperature changes makegreater impact on it,Paddy storage at30℃the fatty acid value was significantly increased than in theconditions of20℃.Sprouting percentage decreased by time,the effect of temperature on the sprouting percentage within360days.30℃storage conditions sprouting percentage reduced to0, and20℃storage conditions sprouting percentage remained at around80%.Nitrogen atmosphere storage isbetter than the controlled atmosphere storage.With gel consistency has maintained an upward trend,the conductivity of paddy increased alongstorage time,the amylose content and alpha-amylase activity showed a downward trend.Controlledatmosphere storage play a certain role in the inhibition of alpha-amylase activity decreased,but the hightemperature storage conditions, alpha-amylase activity is lower than the low temperature storagecondition.The storage temperature have a significant effect on the starch peak viscosity, minimum viscosity,final viscosity, breakdown and setback of paddy.In high-temperature storage conditions, moisture hasno significant effect on the starch pasting eigenvalue of paddy.Atmosphere storage for paddy in normal conditions one year changes little to the qualities, so thereis not necessary to storage stale grain with atmosphere storage.Among all indicators of correlation analysis, and the comprehensive value was significantlycorrelated with sprouting percentage,hardness, viscosity.as a result, the sprouting percentage,hardness, viscosity can be used as sensitive factors of the quality of high-quality paddy....
