Phytosterol Esters、Phytosterol and MCT has a wide range of application in thepharmaceutical, food and chemical industry. However, because of their are insoluble in estersubstances, they have great limitation in water-based materials.In this paper, microemulsion is obtained by the O/W type microemulsion whichcontained Phytosterol Esters, Phytosterol and. MCT. Then the Octyl and decyl glycerate,phytosterols and phytosterol esters microemulsions are treated by spray drying and embededby water-based wall material symplectic caprate glyceride, phytosterols and phytosterol estersfor a wide range of use in water-based materials.This paper focus on the ratio between water and oil, emulsion temperature, surfactantmixtures, spray drying condition and the microcapsule wall material’s impact on embedding.The specific conditions as follow:(1) The optimal condition to prepare Phytosterol Esters microencapsulated powder whichuse O/W type emulsion spray-drying method are as follow: the ratio between Water and oil is1:1,, emulsifying temperature is60℃, emulsifier compound is consist of single-stearylglycerol Trimerization ester (HLB7.5), sucrose fatty acid ester (HLB11.0) and sucrose fattyacid ester (HLB16.0), the total content of3%, add less. Inlet temperature of spray dryingtemperature is200℃, outlet temperature is80℃,wall material for the organic acacia.(2) The optimal condition to prepare phytosterols microencapsulated powder which useO/W type emulsion spray-drying are as follows: add12%sucrose, emulsifying temperature of55℃in water bath, emulsifier compound is consist of sucrose fatty acid ester (HLB11.0) andsucrose fatty acid ester (HLB16.0), the total content is12.5%, Spray drying inlet temperatureis200℃and outlet temperature is80℃. Wall material selected sodium caseinate.(3)The optimal condition to prepare MCT microencapsulated powder which use O/Wemulsion and spray-drying method are as follows: the ratio between Water and oil is1:1,emulsifying temperature is70℃, emulsifier compound is consist of Trimer glycerolmonostearate (HLB7.5), sucrose fatty acid ester (HLB9.0) and sucrose fatty acid ester (HLB16.0), inlet temperature of spray drying temperature is160℃, the outlet temperature is80℃. Wall material for starch (Hi-cap).Compare to other traditional methods, this method is simple, with mild reactioncondition, does not require special equipment and harsh reaction conditions, easily adapt tolarge-scale industrial production.
