Phytosterols are widely concerned because of their definite health effects of lowering cholesterol and preventing cardiovascular diseases.At the same time,phytosterols have good grease gel properties.The use of phytosterols to build an oil supramolecular gel combines phytosterols with other organic Compounding of glue,using vegetable oil as the continuous phase,through self-assembly fibrillation and crystal aggregation to form a space network structure to solidify the liquid oil,the resulting oleogels has plasticity,low trans fatty acid,low saturated fat and nutritional functionality,Become a research hotspot of healthy oils.In this study,phytosterol(PS),phytosterol ester(PE),beeswax(BW)and palmitic acid(PA)were used as oleogelators to formulate and prepare phytosterol oleogels.The effect of added concentration and matrix lipid type on the properties of oleogels,and further combined with animal experiments to explore the biological function of phytosterol oleogels to lower blood lipid.The main content and results are as follows:(1)The phytosterol oleogels were prepared with the PS and BW double gel system,and the effects of the compounding ratio of the gel,the added concentration and the type of lipid matrix on the properties of the oleogels were studied.The results show that the hardness(4600 N),stickness(1900 N)and reaction enthalpy change(2.54 J/g and 17.31 J/g)of PS0: BW10 oleogels in oleogels with different ratios are the largest,and PS10: BW0 oleogels is the smallest,which are 300 N,383 N,0.11 J/g and0.46 J/g;the increase of gel concentration will increase the number of crystals and increase the arrangement density,resulting in the increase of oleogels hardness,stickness and reaction enthalpy;Oleogels crystal analysis shows that it has three crystalline forms(?,?'and ?),the microstructure is needle-like and snowflake-like network structure,it is speculated that it may form a gel through the interaction of non-covalent bonds Oil;The oxidation resistance of oleogels increases with increasing PS content and concentration of oleogelators.(2)The preparation and properties of phytosterol ester oleogels were studied.The results show that the microstructure of PE oleogels is needle-shaped,and the crystalline crystal forms are mainly ? and ?'.Compared with PS oleogels,the number of crystals,hardness,stickness and reaction enthalpy change are reduced.PE8: BW2 oleogels are 251 N,50.5 N,0.98 J/g and 1.18 J/g respectively;the hardness,stickness,melting point,freezing point and reaction enthalpy change of the oleogels increase withthe concentration of the oleogelators;The stickness value of the oleogels is inversely proportional to the unsaturated fatty acid content of the matrix lipid.The matrix lipid has no significant effect on the thermal properties,crystalline crystal form and binding form of the oleogels,but it will significantly increase the oxidation resistance of the oleogels.(3)The properties of PS and PA double gel-phytosterol oleogels were studied.The results show that the microstructure of the oleogels is needle-like and snowflake-like crystals,and the crystal forms are ?,?'and ?,which are presumed to be formed by physical entanglement;the proportion and concentration of the oleogelators are the main factors affecting the properties of the oleogels,The greater the enthalpy of reaction by affecting the crystallization density,the reaction is driven by the change of enthalpy,resulting in an increase in the hardness,stickness,melting point and freezing point of the oleogels;The affinity of the lipid matrix to the oleogelators is the main factor affecting the oleogels.(4)The hypolipidemic effect of phytosterol oleogels was studied through animal experiments.A 10-week chronic test in SD rats show that the five intervention groups reduce the liver index and spleen index of the rats,of which the spleen index is not different from the Blank control group(NC);liver biochemical indicators show phytosterol oleogels(PS-1),phytosterols ester oleogels(PE-1)and phytosterols ester oil-based mixed group(PE-2)can effectively reduce the concentration of alkaline phosphatase(ALP),alanine aminotransferase(ALT)and aspartate aminotransferase(AST)in the blood,effectively reduce the accumulation of fat in the liver;blood lipid level test results show that PS-1,PE-1 and PE-2 can reduce triglyceride(TG),total cholesterol(TC)and Low density lipoprotein cholesterol(LDL-C);Observation of liver histopathological sections reveal that positive control(AC)group and PS-1 can effectively relieve fatty liver,and PE-1 and PE-2 groups do not show a clear effect,indicating that phytosterol oleogels have a significant effect on reducing hyperlipidemia.
