EPA/DHA Concentration And Protection Technology

Fish oil is a rich source of n-3polyunsaturated fatty acids, especially eicosapentaenoicacid(EPA) and docosahexaenoic acid(DHA), which have functions as preventing retina,nourishing the brain, enhancing immunity the ability of resisting infection and anti-cancerfunction. It is used to improve the content of EPA and DHA in fish oil by extracting. EPA andDHA in oils are highly unsaturated and susceptible to oxidation in the presence of air, lightand high temperature. Oxidative lipids lose physiological functions and nutritive value. Fishoil oxidation can be reduced by fishoil-microencapsulation, which could resist the oxidation,conceal fishy smell, stabilize the core material and keep its function.In this study urea inclusion was used for extraction of EPA and DHA in fish oil. Throughthe change proportion of the urea occupies the reactants, the respond conditions wereoptimizated and the best technological conditions of the concentration fish oil were obtainedafter two inclusions. The yield of production was improved by using cycle urea. The resultsshowed that,60～65℃, inclusion time is30min, in the first urea inclusion, fishoil/urea/methyl weight=1/0.7/1.4, in the second time, fish oil/urea/methyl weight=1/0.7/1.2,the content of EPA and DHA can attain75%from56%, the yield can attain68%.The POV and AV were reducted when activated charcoal, Vc, VEand Citric acid wereadded. The acceptable was improved when the smell and taste were optimized.The fishoil-microencapsule were made by O/W micro-emulsion method and dried byspray drying. Experiment mainly researched the effect of high-speed shear time, sugaramount, emulsion temperature, wall material, spray drying craft on powder stability. Theresults showed that, storage stability is good when Hi-Cap and sucrose as coating materialwere used, emulsification in water bath at40～50℃,30min of high-speed shear’s cut time.The antioxidative effects of products were attributed to the structure of wall material,protected the core material and enhanced the storage stability of the microencapsules.fishoil-power was stable and superficial oil belowed1%.
