Lentinus edodes is a kind of traditional edible fungus and also one of the Chinese specialities. China is the first big country of lentinus edodes cultivation in the world. In recent years, the annual output is more than one million tons and account for more than70%of the world. Lentinus edodes stipe is the part below of fungus and accounts for about1/4-1/3of the dry weight of the entity. Lentinus edodes stipe contains abundance of free amino acid, polysaccharide, linoleic acid, dietary fiber and other nutrients. But because of its poor taste and inability to be eaten directly, so we always cut it during lentinus edodes processing. Most of them are abandoned and cause a great waste of the resources. Practice shows that processing lentinus edodes stipe into fluffy floss shape can significantly improve its palatability. But processing floss still give priority to traditional manual method and the production efficiency is so low that inconformity to the requirements of the market scale production. Therefore, an urgent need to adopt mechanization method for floss production appeared. For this reason, the purpose and significance of this study is in an effort to explore the optimal technological parameter and develop the equipment for lentinus edodes stipe floss production.Shear strength, tensile strength and other mechanical properties of lentinus edodes stipe are the important basis for processing to floss and the moisture content is an important factor affects the mechanical characteristics of lentinus edodes stipe. This paper measured shear strength of114samples and tensile strength of119samples in different moisture contents, discussing the influence of moisture content on these properties. The results showed that when the moisture content of lentinus edodes stipe ranged from17.46%to83.34%(w.b.) and the shear strength was4.11MPa to0.44MPa. The moisture content was13.86%to89.52%(w.b.) and the tensile strength was3.36MPa to0.18MPa. Moisture content of lentinus edodes stipe affected shear strength and tensile strength significantly (p<0.01), the lower the moisture content, the larger the tensile strength and shear strength. Shear strength and moisture content of the fitted curve for y=-1.6571n (x)+7.9645(R2=0.8441). Tensile strength and moisture content of the fitted curve for y=-0.8941n(x)+4.5114(R2=0.5802).Referred to shredded meat processing technology, employed kneading processing principle and combined with shear and tensile mechanical properties of lentinus edodes stipe, designed the roller and the spiral equipments of floss processing and completed the manufacture of the test prototypes. Then adopted the equipments for test, the results showed that the double drum of double drum nail tooth equipment turned opposite or homonymous direction could make low moisture content of lentinus edodes stipe block size smaller, double drum opposite rotation scheme almost had no effect on stipe with high moisture content. Double drum homonymous rotation scheme could rub stipe with high moisture content scattered, but easily to stick into the screw tooth of high speed roller. Single drum spiral device could rub stipe with low moisture into powder, but only part of the elaboration products was filamentous. There was a problem of discharge difficulty when processing stipe with high moisture content.Took double shear dry lentinus edodes stipe as experimental material, adopted the principle of high-speed strike and used small multi-function crusher for test, the effect of processing floss was relatively ideal and the technology of processing floss was determined by the further test. An objective method of quality evaluating of lentinus edodes stipe floss based on texture properties was investigated, accordingly, the production technology of lentinus edodes stipe floss by striking was researched. The results revealed that, there were significant correlation among the bulk density of lentinus edodes stipe floss and the texture properties measured by texture analyzer, such as hardness, adhesiveness, cohesiveness, springiness, gumminess, chewiness and initial modulus. The bulk density and hardness can be used as objective evaluation index of the quality of lentinus edodes stipe floss, and both were affected by moisture content of lentinus edodes stipe and striking time. Appropriate moisture content and shorter striking time are favorable for striking lentinus edodes stipe to become floss. When moisture content of57.41%and striking time of5s, bulk density and hardness were minimum, the effect of processing floss was best, bulk density and hardness was0.127g/cm3,17.5N respectively. On the basis of Linhe brand Taicang shredded meat quality,32lentinus edodes stipe floss samples comparative analyzed between shredded meat one by one, an objective function was established, when the experimental condition of moisture content of57.41%, striking time of5s the objective function value was17.333, minimum in32samples and the quality was nearest to shredded meat. Under the test conditions of this paper, moisture content of57.41%and striking time of5s were optimal parameters for lentinus edodes stipe floss production. The technological parameters can provide reference basis for floss production machinery.
