For the full use wild resources, the development withdraws the Berberis heteropoda Schrenk .pigment, for the later its industry design, the production will provide the certain theory basis and the practicereference value,This research is focused on extraction method of the pigment from the Berberis heteropoda Schrenk . peel,the pigment solution stability,and carried on preliminary appraised to its structure. The major contents of this research are as followings:1. From the craft the research aspect From species of extraction reagent,chroma of extraction reagent,the pH value,the time, the temperature,the proportion of reagent and solvent that compared to 6 aspects considered,through the single factor and theorthogonal experiment,and the variance analysis, obtains following conclusion:pH1.0,50% ethanol solution(v/v),extraction temperature 60℃, extraction time 2 hours two times,to material to liquid ratio 1:6.Obtain using the orthogonal experiment and the variance analysis,the order of influence according to the order of:The pH value,the ratio between shell and solution,the temperature,time,ethyl alcohol density, influence of pH value is remarkable.2. In pigment investigation into stability from the influence factor of stability of the Berberis heteropoda Schrenk .pigment including photostability,themostability,resistance to oxido-reduation,the effect of pH value,food additives,metalion were studied. Also carried on the analysis on pigment solubility, storage way to itscharacteristics. Result should that:Berberis heteropoda Schrenk .pigment is soluble in actic and water polar solvents easily,under the acidic condition,the pigment had fine color and the stability;The pigment is sensitive to illumination,the structure changes under the long time at hot conditions.It should be preserved in the gloomy place;The sweet taste medicinal preparation and the function of protation to color have function of protects the color function,the oxidation inhibitor has the discoloration,Also along with the density difference,the function of adding color and discoloration was different respectively.Different metal ion also has different influence on Berberis heteropoda Schrenk .pigment,Na+,Al3+ play role in keeping from discoloration,Ca2+, K+ and Ba2+ play role in adding color,Fe3+,Pb2+and theCu2+has the function of discoloration,but the stability of pigment was reduced along with increasing of density of metallic ions;Oxidant and reduction have the faction of discoloration,but the highl concentrated reducing agent is advantageous to the pigment preservation;The optioned storage condition of pigment was in distilled water at pH 1.3. In preliminary appraised to its structure Through the spectrum and the chromatograph appraisal,it indicated that the pigment were in ferred to be Malvinidin-3, 5- glycoside,arbinoside and Cyanidin-3-glycoside.
