Although the High-speed Railway Project was only launched in China in recent years, thanks to the our master of the most developed techniques of researching and developing train, China is now enjoying a high speed of development. With the advantages of high speed, high safety level, comfortable, convenient and high rate of on-time departure, Electric Multiple Units of China Railway High-speed is becoming more and more popular.The design and layout of the galley in the bar car, as well as the quality of the food and beverage supply services will influence the image of the railway, and that will also affect the comfort and satisfaction level of the passengers. Therefore, it is closely related to the overall level of train services and economic benefits. Thus, the design of the galley in the bar car is of great significance. The vast majority of domestic bar car galleys of Electric Multiple Units are designed by reference or introduction of foreign models, ignoring the different needs of people, caused by the different human dimensions and lifestyle and other factors between Westerners and Chinese, which is lack of consideration of the actual conditions. The unapplicable man-machine size and spatial distribution, will lead to the decrease of space utilization, increasing the workload, and lowering the feeding efficiency and quality.This thesis, bases on the Ergonomic principles, will firstly:analyze, contrast and summarize the evolution and development trend of the design of bar car galley and the catering modes between China and western countries; Secondly, collect data and conduct targeted field research to different train compositions, different service time and different train numbers of CRH Electric Multiple Units, so as to understand the differences, advantages and disadvantages of the current bar car galley’s operation system, and collect the authentic Man-machine data within the Man-machine-environment system, thus providing reliable evidences for my design; Finally, calculate the Man-machine scale of the train attendant, conduct in-depth analysis on the layout and equipment as well as the functions and Man-machine needs of the bar car’s galley system. According to the collected data and the research data, this thesis will make optimal design for the operation system of the car bar galley.The thesis and design takes "user-friendly design" as its goal, aiming at optimalizing the bar car galley operation system of Chinese Electric Multiple Units, improving the efficiency of the bar car crew and comfort of work, improving feeding quality and carrying on research and design work for ideas, and finally, putting forward an optimal design for related bar car galley operating system of Electric Multiple Units.
