In this study, the number of restaurant staff and the amount of kitchen waste were monthly investigated in a university canteen and reception center in Taiyuan throughout the year. The relationship between the number of dining staff and kitchen waste generated was analyzed. At the same time, the physical and chemical properties of kitchen waste were measured and analyzed its potential for resource utilization on the basis of it. The obtained results were as follows:The annual cumulative number of dining staff was1158400in a university canteen, and the maximum number of dining staff for the whole year was April. The average daily number of dining staff from Monday to Friday was3.2times of the average daily number of dining staff Saturday and Sunday. The number of lunch dining staff was1.34times and1.94times of the number of dinner dining staff and breakfast dining staff, respectively. The annual cumulative number of dining staff was40500in a reception center, and the maximum number of dining staff for the whole year was September. Although the daily number of dining staff is not the total same, however, the number of lunch dining staff was overall more than the number of dinner dining staff.143072kg and14148kg kitchen waste were generated in a university canteen and reception center at2012, respectively. The analysis results showed that there was positive correlation between the number of restaurant staff and the amount of kitchen waste in a university canteen and reception center, and fitting curves were Y=0.123X (R2=0.896) and Y=0.360X (R2=0.731), respectively. In a word, the amount of kitchen waste generated by average every meal each dining staff in reception center were approximately2.93times of the amount of it in canteen staff.The pH value of canteen kitchen waste is ranged from5.93to6.56, and the average is6.21. The pH value of reception center kitchen waste is ranged from5.56to6.34, the average is6.08. The organic matter of canteen kitchen waste range from83.4-90.9%(dry matter), the average is86.3%. The organic matter of reception center kitchen waste range from84.3-92.5%(dry matter), the average is90.0%. To a certain extent, the organic matter content of reception center kitchen waste is higher than that of canteen kitchen waste. For canteen kitchen waste, total nitrogen, total phosphorus, and total potassium were distributed in1.75%-2.17%(dry matter),0.25%-0.49%(dry matter), and0.78%-1.48%(dry matter), and the average were1.97%,0.38%, and1.06%, respectively.The total nitrogen content of reception center kitchen waste fluctuates between1.70%and2.58%(dry matter), the average is2.18%. The content of total phosphorus is distributed from0.37%to0.78%(dry matter), and the average is0.52%.The content of total potassium fluctuates between0.46%and0.97%(dry matter), and the average is0.74%. The total nitrogen and phosphorus content of reception center kitchen waste is higher than those of canteen kitchen waste, but the potassium content is less than canteen kitchen waste. What’s more, the resulted showed that the content of nitrogen is more than potassium, and potassium content is more than phosphorus in two kinds of kitchen waste.When landfill wastes produced in canteen and reception center,10367m3of methane will be produced annually. If anaerobic digestion technology, which is artificially controlled, is adopted, the potential to produce methane will be further increased. If the wastes are composted and then made into fertilizer, it will produces11545kg organic matter,319kg nitrogen,106kg phosphorus, and271kg potassium. If the waste is dried totally and sent into incinerator,5.6×104-7.4×104kWh electricity will be generated.
