Since possessing numberous bioactivities and pharmacological activities, ferulic acid has been broadly applied in medicine, food, cosmetics and other fields. With ferulic acid as the lead compound, its modification is mainly concentrated in its chemical structure. In this thesis, the second chapter and the third chapter introduce not only direct esterification of ferulic acid and alkyl alcohols, but also separation process of crude product.2-ethylhexyl ferulate and docecyl ferulate were synthetized successfully. Meanwhile, main factors, such as molar ratio of substrate, temperature, catalyst amount, reaction time, were investigated on influence of esterification reaction. Under the optimizing reaction condition, yield of2-ethylhexyl ferulate reached up to94.1%, with up to81.8%for dodecyl ferulate. Sepration and pruification process of ferulate were studied by chromatography on crude product. A method for determining the content of ferulate was developed by ultraviolet spectrophotometric method. The chemical structure of two ferulate was confirmed by UV, FTIR,MS and NMR.Physic-chemical characters were determined for targeted ferulate in the fourth chapter. Antioxidant activities of ferulic acid and ferulate were studied in vitro by DPPH radical scavenging and ferric reducing antioxidant power assays. The results showed that these ferulate possessed outstanding scavenging potency, however, there is no markedly difference among of them, ICso(31.89±0.02~42.52±0.02). The order of relative ferric reducing potency: ethyl ferulate (62.79±0.01)>2-ethylhexyl ferulate (57.36±0.01)>dodecyl ferulate (56.58±0.01)> ferulic acid(36.90±0.02). Antioxidant activity of different antioxidant in bulk linseed oil had studied by Schaal oven-storage test. These ferulic acid derivatives exhibited good dose-effect relationship at the scope of0.02%~0.1%(wt/wt). TBHQ was the most effective, subsequently in order, ethyl ferulate,2-ethylhexyl ferulate, dodecyl ferulate, ferulic acid, so these ferulate could play a role in delaying rancidity process and peroxidation process of lipid.
